MEDITERRANEAN DEVILED EGGS

Yield 24 EGG HALVES

Number Of Ingredients 10

1 dozen large eggs
1 tablespoon finely chopped flat-leaf parsley, more for garnish
1 tablespoon finely chopped, rinsed capers
1/4 teaspoon anchovy paste, more to taste
Zest of 1 lemon, finely minced
Juice of 1/2 lemon
3 tablespoons mayonnaise
1 tablespoon Dijon mustard
2 tablespoons cold water
Pepper to taste

Steps:

  • Place eggs in a pot large enough to hold them all in a single layer. Cover by 3 inches of cold water and place on the stovetop over high heat. Once the water starts simmering briskly, reduce heat to medium high and cook for 12 minutes. Use a slotted spoon to transfer eggs to a bowl of ice-cold water. Let cool for 5 or 10 minutes, then peel. Slice eggs lengthwise. Remove yolks and place them in a medium bowl. Arrange egg white halves on a rimmed baking sheet. To prepare the filling, add parsley, capers, anchovy paste, lemon zest, mayonnaise, mustard and water to yolks and mash. Taste and add pepper. The filling will be salty from the capers and anchovy, so additional salt will not be needed. Use two small spoons to scoop filling into egg white halves. Sprinkle with chopped parsley and serve.

Tips:

  • Perfect Hard-Boiled Eggs: For foolproof hard-boiled eggs, place them in a single layer in a saucepan and cover with cold water. Bring the water to a boil over high heat, then immediately remove the saucepan from the heat and cover. Let the eggs stand in the hot water for 10-12 minutes, depending on how hard you want them to be. Transfer the eggs to an ice bath to stop the cooking process and prevent them from overcooking.
  • Smooth and Creamy Yolk Mixture: To ensure a smooth and creamy yolk mixture, use a fine-mesh sieve to strain the egg yolks before mixing them with the other ingredients. This will remove any lumps and ensure a velvety texture.
  • Flavorful Additions: Don't be afraid to experiment with different flavor combinations to create your own unique deviled eggs. Consider adding herbs like dill, chives, or parsley, spices like paprika or cumin, or even a drizzle of hot sauce for a spicy kick.

Conclusion:

With their vibrant colors, creamy texture, and delightful flavors, these Mediterranean Deviled Eggs are sure to be a hit at your next gathering. Whether you serve them as an appetizer, a side dish, or a snack, these elegant and delicious treats will leave your guests wanting more.
