4 pints cherry tomatoes
Good olive oil
Kosher salt
Freshly ground black pepper
20 fresh basil leaves, chopped or julienned
Sea salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the tomatoes lightly with olive oil on a sheet pan. Spread them out into one layer and sprinkle generously with kosher salt and pepper. Roast for 15 to 20 minutes, until the tomatoes are soft.
  • Transfer the tomatoes to a serving platter and sprinkle with basil leaves and sea salt. Serve hot or at room temperature.

2 tablespoons olive oil, divided
2 pints cherry or grape tomatoes
Salt and pepper
2 garlic cloves, minced
1 tablespoon minced fresh basil

Steps:

  • Heat 1 Tb. olive oil in a 12-inch skillet over medium-high flame until it just starts to smoke. Add tomatoes, and season with salt and pepper. Saute, shaking pan frequently, until tomatoes soften and skins just begin to wrinkle, about 2 minutes. Stir in the garlic and continue to shake the pan until garlic is fragrant. Off heat, stir in the basil and remaining 1 Tb. olive oil, then serve.

I got this recipe from a Charleston Junior League cookbook. This is always a hit on the buffet at my Christmas party. Think of this appetizer as a very fresh bloody mary. (Cook time is time allowed for marination.)

30 -40 cherry tomatoes, stems removed
1 cup vodka
1 teaspoon celery salt
1/4 cup lemon pepper seasoning

Steps:

  • Pierce the tomatoes a few times on the top (stem side).
  • Place the tomatoes in a serving dish or bowl.
  • Pour the vodka over the tomatoes.
  • (Each tomato should be partially submerged in the vodka. Depending on the serving bowl, you may need to use more than 1 cup.) Allow to marinate for at least 6 hours.
  • In a small bowl combine the celery salt and lemon pepper seasoning, mixing well.
  • Place the bowl of seasoning next to the bowl of tomatoes along with a small container of toothpicks.
  • Guests are to spear a tomato with a toothpick and then dip it in the seasoning mixture.

6 large, ripe tomatoes, peeled, seeded and diced (juices reserved)
6 tablespoons freshly squeezed lime juice, plus wedges
2 tablespoons Worcestershire sauce
2 teaspoons extra-spicy horseradish
2 teaspoons kosher salt, plus sea salt, for serving
2 teaspoons freshly ground black pepper, plus more for serving

Steps:

  • In a blender, puree the tomatoes, lime juice, Worcestershire, horseradish, and salt and pepper until smooth. Chill covered until ready to use.
