1 tablespoon olive oil
1 medium onion, finely chopped
1 medium green bell pepper, finely chopped
2 cloves garlic, minced
1 cup salsa
1 (15.25 ounce) can whole kernel corn, drained
1 pound ground turkey
1 (1.25 ounce) package taco seasoning mix
⅓ cup dry bread crumbs
6 (10 inch) flour tortillas
6 tablespoons sour cream
2 cups shredded lettuce

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Coat a medium baking dish with cooking spray.
  • Heat the olive oil in a skillet over medium heat, and saute the onion, green pepper, and garlic 5 minutes. Remove from heat, and cool slightly.
  • In a small bowl, mix the salsa and 1/2 the corn. In a large bowl, mix the onion mixture with the turkey, taco seasoning, and 2 tablespoons of the salsa mixture. Divide into 6 patties, and press into the breadcrumbs to lightly coat on all sides. Arrange coated patties in the prepared baking dish.
  • Bake the patties 10 minutes in the preheated oven. Drain any liquid from the dish, turn patties, and spread with the remaining salsa mixture. Continue baking 10 minutes, to an internal temperature of 165 degrees F (75 degrees C).
  • Warm the tortillas in the microwave, about 30 seconds on High. Wrap the cooked turkey patties in the warmed tortillas with sour cream and lettuce. Sprinkle with remaining corn to serve.

2 garlic cloves, finely minced
1 1/2 teaspoons Mexican chili powder
1 1/2 teaspoons sweet paprika
1 teaspoon hot paprika or 1 teaspoon cayenne powder
1 teaspoon red wine vinegar
1 teaspoon tequila
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
8 large shrimp, peeled and deveined (2 for each burger)
3 sprigs fresh thyme leaves
1 garlic clove, minced
1/2 teaspoon extra virgin olive oil
1/3 teaspoon salt
1/8 teaspoon fresh ground black pepper
3 tablespoons mayonnaise
1 tablespoon tomato paste
1 1/2 teaspoons paprika
1 teaspoon yellow mustard
1 lime, juice of

4 sweet potato hamburger buns (see recipe #518438) or 4 other hamburger buns (see Sweet Potato Burger Buns)
1/2 cup of shredded manchego cheese
1 few thin slices tomatoes (optional)

Steps:

  • To prepare the chorizo patties: Mix all the ingredients together until evenly combined. Cover with plastic wrap and refrigerate for at least 1 hour. Note: Can make this the day before.
  • To prepare the garlic shrimp: After peeling, deveining and rinsing the shrimp, dry them really well on a clean towel or paper toweling. Mix evenly with the remaining shrimp ingredients. Cover with plastic wrap and refrigerate for 30 min to 1 hour.
  • To prepare the paprika mayo: Mix all the ingredients together until even. Set aside.
  • To make the burger: Divide the chorizo-mixture into 4 equal portions, then shape into patties slightly larger than the buns.
  • Heat up 1 tablespoon olive oil in a large skillet over medium-high heat until sizzling hot, then add the butter until melted. To the pan add the chorizo patties (maximum 2 patties at a time). Leave the patties to pan-fry without moving, until a nicely browned crust has formed on the bottom. Turn the patties over, then add the shredded manchego cheese on top (2-3 tablespoons on each).
  • Cover the skillet completely with a lid and keep cooking on medium-high heat for another 1-2 min (the steam will melt the cheese as well as cook the patties), just until the center of the patties is cooked through. Transfer the patties onto a plate and let rest.
  • Keep the chorizo drippings in the skillet and cook the shrimp on high-heat, about 1 min on each side until just cooked through. Set aside.
  • If you want to toast the buns, remove any food-solids inside the skillet with a bit of oil left, then toast the cut-sides of the buns until golden browned in the same skillet.
  • Apply a generous layer of paprika mayonnaise on both sides of the buns, then put 2 thinly sliced tomatoes and a chorizo patty on top. Slice the shrimp lengthwise and place over the patty. Top with upper bun.

Kosher salt and freshly ground pepper
Vegetable oil, for the grill
4 soft kaiser rolls, split
1 avocado, halved, pitted and sliced
Juice of 1/2 lime
1 15-ounce can refried black beans, warmed
1/2 cup queso fresco cheese, crumbled
Pickled jalapeno slices, for topping
1 1/2 cups shredded iceberg lettuce

Steps:

  • Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with the vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. Remove the patties to a plate and let rest 5 minutes. Grill the rolls, cut-side down, until lightly toasted, about 1 minute. Toss the avocado and lime juice in a bowl and season with salt and pepper. Spread the refried beans on the bun bottoms, then top with the burger patties, cheese, avocado, pickled jalapenos and lettuce. Cover with the bun tops.

500 g lean ground beef
400 g kidney beans, rinsed, drained & roughly chopped
25 g approx sachet taco seasoning mix
1 onion, grated
1 egg, lightly beaten
1 cup breadcrumbs
1 tablespoon oil
150 g cheddar cheese, cut into thin slices
6 hamburger buns
lettuce leaf
1/2 cup sour cream
1/2 cup salsa
2 ripe avocados, mashed
1 garlic clove, crushed
1 small red onion, finely chopped
1 small ripe tomatoes, finely chopped
1 tablespoon lemon juice
1 dash Tabasco sauce

Steps:

  • Combine mince, beans, seasoning mix, onion, egg & breadcrumbs in a bowl.
  • Divide the mixture into 6 portions and shape into flat hamburger patties.
  • Heat the oil in a frypan & cook the patties over med heat for 3-4 mins each side or until cooked through.
  • Place a couple slices of cheese on top of each patty. and continue cooking until the cheese starts to melt.
  • Toast & lightly butter the hamburger buns. Top the bases with lettuce leaves, a hamburger patty, and a generous spoon of each the guacamole, salsa & sour cream & finish with the bun lid.
  • To make guacamole, combine all ingredients in abowl & mix well to combine.

1 pound medium shrimp, shelled and deveined
2 tablespoons finely chopped fresh cilantro
2 large eggs
1 cup plain breadcrumbs
2 tablespoons chipotle adobo sauce
1 tablespoon fresh lime juice
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1 clove garlic, minced
2 tablespoons vegetable oil
4 hamburger buns, split and toasted
2 medium tomatoes, sliced
4 butter lettuce leaves
1/4 cup mayonnaise
1 tablespoon fresh lime juice
2 medium cloves garlic
1 avocado, halved and pitted
Sea salt and freshly ground black pepper

Steps:

  • For the Mexican shrimp burgers: Measure out 3/4 cup of the shrimp and set aside. Add the remaining shrimp to a food processor fitted with the blade attachment. Add the cilantro and eggs and pulse until the mixture is combined but not completely smooth. Transfer to a mixing bowl and set aside.
  • Roughly chop the reserved shrimp into small pieces, then add it to the mixing bowl. Add the breadcrumbs, chipotle adobo sauce, lime juice, salt, pepper and garlic and mix to blend the ingredients. Use a 1/2-cup measure to scoop and shape the shrimp mixture into 4 burgers. They will be sticky. Refrigerate for 30 minutes.
  • For the avocado aioli: Add the mayonnaise, lime juice, garlic, avocado and some salt and pepper to a food processor and blend until smooth.
  • Coat the bottom of a large saute pan with the oil and place it over medium-high heat. Once it's very hot, saute the shrimp burgers until just cooked through, 2 to 3 minutes per side. They should be golden brown.
  • Add about 1 tablespoon of the avocado aioli to each half of the toasted buns. Add a burger to each, followed by a couple of tomato slices and a piece of lettuce. Close the burgers and enjoy!

1/2 envelope taco seasoning
1 can whole green chili, drained,rinsed,and patted dry

  • Mix the ground meat and taco seasoning with your hands.
  • Make 4 patties.
  • Spray grill with nonstick cooking spray before igniting.
  • Heat to medium, then put burgers on.

  • Tip the beans into a large bowl, then roughly crush with a potato masher.
  • Add the breadcumbs, chili powder, cilantro stalks and half of the leaves, egg and 2 tablespoons salsa.
  • Season to taste and then mix together well with a fork.
  • Divide the mixture into 6, then wet your hands and shape into burgers. If you are freezing them this is the time where the burgers can be frozen.
  • Place on a non-stick baking tray, then grill for 4 to 5 minutes on each side until crisp. If cooking from frozen, bake for 20 to 30 minutes in a 400 degree oven.
  • While the burgers are cooking, mix the remaining cilantro leaves with the yogurt, lime juice and a good grind of black pepper.
  • Split the buns in half and spread the bases with some of the yogurt.
  • Top with any lettuce, onion, etc that you might like and then put a burger on top.
  • Put another dollop of lime yogurt and some salsa on top of burger and put the other half of the bun on top.
  • Serve.

These are not spicy (feel free to add spice if you like yours that way!) but have a fresh, vibrant flavour that goes well with burger buns or with other sides such as Mexican rice.

1 tomatoes
1 lb ground turkey
4 ounces mexican cheese, grated
1/2 teaspoon paprika
1 tablespoon chopped fresh coriander
aluminum foil
salsa, (optional)
hamburger bun, (optional)

Steps:

  • Start the barbecue or preheat the grill.
  • Remove the core and seeds from the tomato and finely dice the flesh.
  • In a bowl, add to the tomato: the turkey, mexican cheese, paprika and fresh coriander. Mix well.
  • Divide the mixture into four and shape into burgers. If you have time, cover and chill in the fridge for 20 minutes to let the flavours blend.
  • Place a sheet of foil over the barbecue or grill, or use a baking sheet if preferred- because these burgers are made from a low fat meat, they can break up if not handled carefully, so the foil helps them to stay together. Handle and flip them with care.
  • Place the burgers on the barbecue or under a grill, on the foil or baking sheet.
  • Cook for 15 minutes, flipping regularly.
  • If using a barbecue, remove the foil at this point- after 15 minutes- so the burgers pick up the chargrilled flavour in the next 10 minutes.
  • Cook for a further 10 minutes (whether using a barbeque or a grill) or until completely cooked through.
  • Serve with salsa if desired, on burger buns, Mexican rice, or whatever takes your fancy!

The burger:
2 pounds ground turkey meat
Half a dozen 6-inch corn tortillas
OR about 1 cup crushed corn tortilla chips
2 tea spoons cumin seeds, roasted and ground in a spice grinder or with a mortar and pestle/molcajete
1/2 cup cilantro, finely chopped
2 large garlic cloves, minced
1/4 cup epazote, finely chopped (if available)
2 table spoons dried oregano, preferably Mexican
2-3 jalapeno peppers, minced
1 onion, minced
1/4 cup salsa of your choice
salt to taste
1/4 cup olive or grape seed oil
Additional oil for greasing grill or pan.
To serve:
Buns
Mild cheddar, queso chihuahua and/or Monterray jack cheese
Avocado slices or guacamole
salsa
slices of onion grilled for 1-2 minutes per side
tomato slices
lettuce leaves

Steps:

  • If using corn tortillas, toast in pre-heated, 400-degree oven about 15 minutes before turning and toasting for 15 more minutes or until crunchy. Break tortillas into smaller pieces and add a few at a time to the food processor until all are ground to crumbs. Add these crumbs or crushed tortilla chip crumbs to turkey. Combine remaining ingredients, except for oil. Add that to turkey. Form turkey into flat patties that are a little thinner in the middle than on the sides. Brush both sides of patties lightly with oil. Place in refrigerator until ready to cook, up to one day ahead of time. Brush grill or pan with oil and heat to medium high. Cook burgers about 5-6 minutes per side or until center is no longer rare. If desired, top burgers with cheese about one minute before removing from heat. Toast buns on grill or in toaster until slightly browned. Serve with suggested toppings.

1 1/2 lb lean ground beef
6 Tbsp panko bread crumbs
1/4 c red onions, finely chopped
2 Tbsp pickled jalapeño peppers, finely chopped
1 Tbsp chipotle puree
1/2 Tbsp fresh cilantro, chopped
1/2 tsp ground cumin
freshly ground black pepper, to taste (i always use mixed peppercorns)
1/2 c sharp cheddar cheese or pepper jack, grated
AVOCADO SPREAD
1 large ripe avocado, seeded
1/4 large lime, juiced
2 Tbsp light sour cream or crema
1 small clove garlic, pressed
2-3 dash(es) hot sauce, such as cholula®
freshly ground black pepper, to taste (i always use mixed peppercorns)

Steps:

  • 1. In a large bowl, combine ground beef, panko, onion, jalapeño peppers, chipotle pepper, cilantro, cumin, freshly black pepper and cheese. Divide mixture into 4 equal portions and form 4 patties. Place them in a plate, cover with plastic wrap and transfer to the refrigerator for 1 hour.
  • 2. The stuffed version: mix all the ingredients except cheese and form 6 balls but 3 bigger than the others. Create a well in the center of the biggest ones and add 2 tbsp. cheese per. Place the smaller patties on top and seal. Cover with plastic wrap and refrigerate for 1 hour.
  • 3. In a small bowl, scoop avocado and add lime juice; mashed with a fork until smooth. Add sour cream, garlic, hot sauce and freshly ground black pepper; stir until well blended. Transfer spread to the refrigerator until ready to serve.
  • 4. Preheated BBQ. Grill burger at 500ºF for 7 minutes per side. If desired, about 3 minutes before the end of cooking, place 3 thin slices of cheese per burger. Spread avocado mixture to top buns and garnish to liking.
