MEXICAN POTATO CASSEROLE

Found this on a Mennonite recipe club...they have some wonderful recipes...mennonitegirlscancook.com Can be made with chicken too! Anyway...this is soooooo yummy! I just made it again.

Provided by Wendy Rusch

Categories     Casseroles

Number Of Ingredients 8

4 medium potatoes, scrubbed or peeled and cut into 1/2" cubed
2-3 Tbsp butter, melted
2 1/2 Tbsp taco seaoning
1/2 lb ground beef
1/4 c onion, chopped
1 c salsa, your favorite blend
1/2 c bell pepper, chopped
1 c monterey jack cheese, shredded

Steps:

  • 1. Place potatoes in a greased casserole dish, melt butter and mix in taco seasoning, pour over potatoes, stir to coat well. Bake uncovered at 425 for 40 minutes. Take out and stir, then bake another 10 minutes.
  • 2. In the mean time while potatoes are baking, brown and crumble beef, add onion and cook until onion is soft, then drain. Stir in salsa and peppers. Then when potatoes are done, pour meat mixture over the top of them, top with cheese and bake uncovered for 10 minutes. Serve with additional salsa and sour cream, if desired.
  • 3. ***This is good using chicken in place of the hamburger...use ground or shredded,(I tried it with shredded) then use chicken taco seasoning instead of the regular taco seasoning.

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for this casserole as they hold their shape well and have a fluffy texture when cooked.
  • Slice the potatoes thinly and evenly: This will help them cook evenly and prevent them from becoming mushy.
  • Use a large skillet to brown the potatoes: This will help them get evenly browned and crispy.
  • Don't overcrowd the skillet when browning the potatoes: If you overcrowd the skillet, the potatoes will steam instead of brown.
  • Season the potatoes generously: Use a combination of salt, pepper, and garlic powder to season the potatoes. You can also add other spices, such as chili powder or cumin, to taste.
  • Use a creamy sauce: A creamy sauce, such as a cheese sauce or a sour cream sauce, will help to bind the potatoes together and make the casserole more flavorful.
  • Top the casserole with cheese: A layer of cheese on top of the casserole will help to brown and crisp it.
  • Bake the casserole until it is bubbly and golden brown: This will ensure that the potatoes are cooked through and the casserole is heated all the way through.

Conclusion:

Mexican potato casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. With its combination of creamy potatoes, flavorful sauce, and melted cheese, this casserole is sure to be a hit with the whole family. So next time you're looking for a quick and easy meal, give this Mexican potato casserole a try.
