MEXICAN PRAWN SALAD

Mexican Prawn Salad image

From *Taste of Mexico* by Elisabeth L. Oritz & per her intro, "Salads in Mexico are usually served w/the main course instead of green vegetables. Salads containing meat or seafood, however, are very satisfying & usually served as a separate course." I adapted this essentially make-ahead & assemble in minutes salad to suit our preferences w/options to add Old Bay Seasoning to the dressing & garnish w/avocado or lime wedges as desired. All ingredients are pre-cooked, but it seemed realistic to show that + ingredient prep time, so 20 min was allowed for prep & 5 min for assembly. *Enjoy* !

MEXICAN SEAFOOD SALAD

Mexican Seafood Salad image

Plump shrimp and delicate red snapper adorn this summery corn-and-tomato salad. Serve atop tender lettuce leaves and sprinkle with corn nuts for a satisfying crunch.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Shrimp Recipes

Time 50m

Number Of Ingredients 12

3 tablespoons fresh lime juice, squeezed rinds reserved
Kosher salt and freshly ground pepper
3 ears corn, shucked
3/4 pound medium shrimp (preferably wild), peeled and deveined
3/4 pound skin-on red-snapper fillet
2 medium tomatoes, cored and coarsely chopped (1 1/2 cups)
1 jalapeno, thinly sliced into rounds
1/2 white onion, finely chopped (3/4 cup)
3/4 cup chopped cilantro
3 tablespoons safflower oil
1 head Boston or Bibb lettuce, leaves separated
Corn nuts, for serving (optional)

Steps:

  • Bring 1 1/2 inches water and lime rinds to a boil in a wide pot; season generously with salt. Add corn; boil until bright yellow and crisp-tender, 3 minutes. Transfer corn to a plate. Add shrimp and fish to pot; remove from heat, cover, and let stand until shrimp are opaque and fish is cooked through, 3 to 4 minutes. Transfer to plate; let cool about 5 minutes. Discard lime. Cut corn from cobs.
  • Stir together corn, tomatoes, jalapeno, onion, cilantro, lime juice, and oil. Remove skin from fish; flake into bite-size pieces and stir into corn mixture with shrimp. Let cool completely, stirring occasionally (or refrigerate, covered, up to 1 day). Season with salt and pepper. Serve seafood salad over lettuce, topped with corn nuts.

Tips:

  • Fresh ingredients: Use the freshest seafood and vegetables possible for the best flavor and texture.
  • Properly clean and devein the shrimp: Make sure to remove the shells, heads, and veins from the shrimp before cooking. This will help ensure that the shrimp is clean and free of any unpleasant flavors.
  • Cook the shrimp properly: Do not overcook the shrimp, as this will make it tough and rubbery. Cook the shrimp until it is just cooked through, which should take about 2-3 minutes.
  • Use a variety of vegetables: Don't be afraid to experiment with different types of vegetables in your salad. Some good options include tomatoes, cucumbers, onions, bell peppers, and avocado.
  • Make your own dressing: A simple vinaigrette dressing made with olive oil, vinegar, and herbs is a great way to dress the salad. You can also use a store-bought dressing if you prefer.
  • Serve immediately: Mexican prawn salad is best served immediately after it is made. This will ensure that the salad is fresh and flavorful.

Conclusion:

Mexican prawn salad is a light and refreshing dish that is perfect for a summer meal. It is also a healthy option, as it is packed with protein, vitamins, and minerals. With its zesty flavors and colorful ingredients, this salad is sure to be a hit at your next party or gathering.
