EASY MICROWAVE SCALLOPED POTATOES
This came from a recipe book given to me by my grandmother-in-law. I like it because it cooks in about 1/2 the time of regular (oven) scalloped potatoes, and tastes basically the same. Great for weeknights when time is at a premium, or if you have no room in the oven. (Note, I noticed other recipes for scalloped potatoes call for cheese or other ingredients - this is scalloped potatoes like my mom used to make, basically just white sauce and potatoes. We always eat ours with lots of ketchup on top!)

Steps:
- Put margarine (or butter) into LARGE glass bowl, and microwave on High for 1 minute, or until melted. (If you really like cleaning your microwave, feel free to use a smaller bowl.).
- Blend in flour, salt & pepper. Gradually stir in milk.
- Microwave on High 8-10 minutes, stirring after 4 minutes.
- Layer half the potatoes and onion in a greased 2-quart casserole dish. Top with half the prepared sauce, then the rest of the potatoes and onion, then the rest of the sauce.
- Cover and microwave on High 20 minutes, or until done. (Cooking times will depend on the strength of your microwave; I think ours is in the 1,200-watt range, and 20 minutes usually works just fine for us).

CREAMY MICROWAVE SCALLOPED POTATOES
"These creamy potatoes taste much better than those made from a boxed mix," assures Betty Menerey from Auburn, Michigan. "It's a tradition to prepare them for family gatherings. I usually double the recipe and use one can of cream of chicken soup and one can of cream of mushroom soup."

SCALLOPED POTATOES (MICROWAVE RECIPE)
All I can say is: I-Heart-Velveeta! A note: Be careful not to make this dish too deep with layers (I'd stick to two if possible). Since this is a microwave recipe, you can't foil the top, and if it's too deep, the top will start to overcook before the potatoes on bottom are soft.

Steps:
- Melt butter in 4 cup glass measure, uncovered on High (maximum power) for 1 minutes. Stir in flour. Heat milk in 2 cup glass measure, uncovered on 70 (Roast) for 5 to 6 minutes or until mixture boils and thickens. Stir twice during this time. In 2-quart microproof casserole, combine potatoes, onion, and white sauce. Cover with waxed paper and cook on 90 (Saute) for 9 minutes. Stir. Cover and cook on 90 (Saute) for 9 to 10 minutes, or until potatoes are tender. Sprinkle with paprika if desired.
Tips:
- For a creamy sauce, use a combination of milk and heavy cream. If you don't have heavy cream, you can use all milk, but the sauce will be thinner.
- To make the potatoes more crispy, bake them in a preheated oven at 400°F for 15-20 minutes before adding the sauce.
- If you don't have a microwave-safe baking dish, you can use a regular baking dish and cover it with plastic wrap. Be sure to poke a few holes in the plastic wrap so that the steam can escape.
- To prevent the potatoes from drying out, cover the baking dish with aluminum foil or plastic wrap after baking.
- Scalloped potatoes can be made ahead of time and reheated in the microwave or oven.
Conclusion:
Scalloped potatoes are a classic comfort food that can be enjoyed by people of all ages. They are easy to make and can be tailored to your own preferences. Whether you like them creamy or crispy, mild or cheesy, there is a scalloped potato recipe out there for you.
