1/4 cup loosely packed fresh mint leaves, rinsed, spun dry, finely chopped
1/4 cup unsalted butter, room temperature
1/4 cup cream cheese, room temperature
16 slices best-quality white bread (or whole wheat)

  • Place cucumber slices between layers of paper towels to remove excess moisture.

2 ripe avocados, kept cold in the fridge
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 cup chopped cucumber
2 tablespoons chopped of fresh mint

12 slices white bread
1 small cucumber, thinly sliced
