Yield serves 4 to 6

Number Of Ingredients 7

2 tablespoons unsalted butter, melted, plus more for the pan
2 cups whole milk
1 cup very fine yellow cornmeal
Coarse salt and freshly ground black pepper
Scraped kernels from 2 ears fresh sweet corn (about 1 cup) (see page 188)
2 tablespoons chopped fresh chives
2 large eggs, separated

Steps:

  • Preheat the oven to 375°F. Butter an ovenproof casserole or round 2-quart soufflé mold.

  • To beat the egg whites, in a separate bowl, using a handheld mixer, beat the egg whites with a pinch of salt on high speed until stiff peaks form. Gently fold the egg whites into the warm cornmeal mixture.

Tips:

  • Use fresh, sweet corn: The fresher the corn, the better the spoon bread will be. If you can, use corn that has been picked within the last day or two.
  • Scrape the corn cobs: When you're cutting the corn off the cob, be sure to scrape the cobs with the back of your knife to get all of the kernels.
  • Use a cast iron skillet: A cast iron skillet is the best pan for making spoon bread. It distributes heat evenly and gives the bread a nice crust.
  • Preheat your oven: Make sure your oven is fully preheated before you put the spoon bread in. This will help the bread rise properly.
  • Don't overmix the batter: Overmixing the batter will make the spoon bread tough. Stir just until the ingredients are combined.
  • Serve warm: Spoon bread is best served warm from the oven. You can also reheat it in the microwave or oven.

Conclusion:

Moist corn spoon bread is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to use up fresh corn, and it is sure to be a hit with your family and friends. So next time you're looking for a new side dish to try, give moist corn spoon bread a try. You won't be disappointed!
