4 cups (1/2 of 32-oz. pkg.) ORE-IDA TATER TOTS
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1/2 lb. small fresh mushrooms, cut in half
3/4 cup sliced carrots

Steps:

  • Heat oven to 450ºF.
  • Mix oil and soup mix until blended. Combine remaining ingredients in large bowl. Add oil mixture; mix lightly.

1/2 cup 2% milk
1/4 cup butter, cubed
3 cups cubed cooked chicken
1 package (16 ounces) frozen peas and carrots, thawed
1-1/2 cups shredded cheddar cheese, divided
1 package (32 ounces) frozen Tater Tots

Over the years I have received so many request for this recipe, so here it is. This is a recipe passed down to me from my grandmother. I'm not sure where it originated from, but she put her own special touches to it and man is it mouth-watering. I could eat this for a week straight and each day it taste better than the day before.

3 boneless chicken breasts
1 (10 1/2 ounce) can cream of chicken soup
1/4 cup diced celery
1/2 cup diced onion
milk (optional)
1 cup frozen peas
2 tablespoons Miracle Whip
2 cups shredded cheddar cheese
24 ounces frozen tater tots

Steps:

  • Boil chicken, celery, onion in 3 cups of water.
  • Remove chicken when cooked through and dice into bite size pieces.
  • Remove celery and onions from pot, but keep the stock in pot.
  • Continue boiling stock from chicken, celery and onions until it reduces to 1 cup (if you reduce stock to less than 1 cup, not a problem, add milk to measuring cup with stock to equal 1 cup).
  • Stir together in a bowl chicken, onion, celery, frozen peas, Miracle Whip, cream of chicken soup and 1 cup of reduced stock.
  • Pour chicken mixture into greased 9x13-inch baking dish.
  • Sprinkle with 2 cups shredded cheese (I've tried other cheeses, but cheddar seems to hit the spot for me).
  • Top with tater tots.
  • Bake at 350°F for 45 minutes.

1 tablespoon butter or 1 tablespoon margarine
1 cup celery, diced
1 small onion, diced (optional)
1 lb ground beef
1 (32 ounce) package frozen tater tots
1 (10 1/2 ounce) can cream of mushroom soup (or cream of chicken soup)
3/4 cup milk
salt & pepper

Steps:

  • Preheat oven to 350 degrees.
  • In medium skillet over medium heat, sauté celery and onion in butter.
  • Pour into large bowl and set aside (do not add to casserole dish yet).
  • In skillet, brown the beef.
  • Add salt and pepper to taste (I sometimes add a dash of garlic salt).
  • Combine meat with celery and onion mixture.
  • Place 1 layer of Tater Tots in the bottom of a round casserole dish.
  • Top with meat mixture.
  • Add another layer of Tater Tots on top of the meat.
  • In separate bowl, combine soup and milk.
  • Pour soup mixture evenly over top of casserole.
  • Bake at 350° for 1 hour.

2 tablespoons ground cumin
2 teaspoons garlic powder
Kosher salt and freshly ground black pepper
1/4 cup olive oil
1 1/2 pounds boneless skinless chicken breast, cut into 1-inch pieces
2 bell peppers (red, yellow or orange) cut into 1/4-inch pieces
1 small onion, diced
1/4 cup all-purpose flour
One 14.5-ounce can low-sodium chicken broth
4 ounces cream cheese, cut into pieces
One 14.5-ounce can black beans, drained and rinsed
1 cup frozen corn kernels
1 1/2 cups Mexican blend shredded cheese
80 frozen potato tots, such as Tater Tots (from about one 32-ounce bag)
Guacamole, sour cream, mild salsa and cilantro, for serving, optional

Steps:

  • Preheat the oven to 425 degrees F.
  • Combine the chili powder, cumin, garlic powder, 1 teaspoon salt and a few grinds of black pepper in a large bowl. Heat the oil in a large ovenproof skillet over medium-high heat. Add 2 tablespoons of the spice mixture and the chicken to the skillet and cook, stirring occasionally, until the chicken is no longer pink on the outside and has released some juices, about 5 minutes (the chicken will finish cooking in the oven). Use a slotted spoon to transfer the chicken to a medium bowl; leave the juices and as much oil as possible in the skillet.
  • Add the bell peppers, onion, 1/2 teaspoon salt and a few grinds of black pepper to the skillet and cook, stirring occasionally, until the vegetables begin to soften, 5 to 6 minutes. Sprinkle the flour over the top and stir to combine. Once the mixture looks sandy, add the broth and cook, stirring constantly, until thickened, 3 to 4 minutes. Add the cream cheese and stir until smooth. Fold in the beans, corn, chicken, 1/2 teaspoon salt and a few grinds of black pepper. Sprinkle the top with 1 cup of the shredded cheese. Remove from the heat.
  • Add the potato tots to the bowl with the remaining 3 tablespoons spice mixture and toss to coat. Arrange the tots over the chicken mixture in a single layer in concentric circles. 1 ½ cups grated Colby cheese
1 ½ slices grated Monterey Jack cheese
¾ cup milk
