MOUNTAINMAN CHILI
This recipe has been in my family for a long time. In fact, my mom used to can this and I would lake it on Boy Scout trips. Open a couple of cans of beans, dump a jar of this in it, and the whole troop chowed down. Good on chili-burgers, nachos, whatever.

Steps:
- In a large Dutch oven, cook venison and beef until brown and crumbly.
- Add broth and boil slowly for 30 minutes, uncovered.
- Add all of the remaining ingredients, stir to blend and bring to a full boil.
- Reduce heat and simmer slowly uncovered for 3-6 hours, uncovered. Mixture will thicken as it reduces.
- Add more beef broth if necessary to keep meat barely covered.
- Remove bay leaves.
- Serve with sides of sour cream, shredded mild cheddar cheese,and diced onion.
- Also good over steamed rice, or add chili beans if you wish.
- NOTE: This recipe is best if prepared and then cooled overnight, reheating and simmer the following day; the longer it simmers, the better it tastes.

MANLY CHILI
I got the original recipe from Rachael Ray. I made a few changes based on how I cook. I usually double this for our large family, but do not double the broth. We like to use a honey beer also. My husband likes his chili real spicy and the children do not, so the optional Tabasco sauce is there. I just put in 2 glugs of the BBQ sauce, I do not measure much of this recipe!

- Heat oil in deep pot. Add onions and garlic; saute 3 to 5 minutes, stirring frequently.
- Add beef and brown, another 3 to 5 minutes. Season lightly with Montreal seasoning or salt and pepper. Add beer and let it reduce by half.
- Stir in broth, pate, chili powder, cumin, barbecue sauce. Reduce heat to medium low and simmer 10 minutes.

- In a skillet over medium-high heat, cook the bacon until evenly brown and crisp. Reserve juices in skillet, and set bacon aside. Brown the sausage in the bacon juices. Set aside. Cook the ground beef in the skillet until evenly brown. Set aside. Saute the onion and green pepper in the skillet juices until tender.
- In a large pot over medium heat, mix the bacon, sausage, beef, onion, green pepper, and jalapeno pepper. Pour in the wine and tomatoes, and season with chili powder. Cook 20 minutes, stirring often. Mix in the beans, and continue to cook and stir 25 minutes.
