This is an adaptation from Tom & Candy's recipe. I have made this twice for Thanksgiving breakfast for the school teachers and always get lots of compliments....and requests for the recipe. You can switch out the meat for any type of breakfast meat you might like.

MORNING BREAKFAST CASSEROLE

Morning Breakfast Casserole image

My family loves morning casseroles. I love them because all the work is done the night before. This really comes in handy on those mornings when you have overnight company and want something really yummy, but don't especially want to make the large mess in the kitchen.

SUNDAY MORNING BREAKFAST CASSEROLE RECIPE - (4.5/5)

Sunday Morning Breakfast Casserole Recipe - (4.5/5) image

Provided by á-25138

Number Of Ingredients 9

2 slices white bread (I used leftover french bread from dinner the night before. If there is any way you can do this I highly recommend it!)
1 pound breakfast sausage
1 1/2 cups thinly sliced cooked, unpeeled red potatoes
1 1/2 cups mixed cheddar & Monterey Jack cheese, shredded
6 large eggs, lightly beaten
2 cups whole milk
1 teaspoon mustard powder
1/2 teaspoon salt
Black pepper, to taste

Steps:

  • Grease a 2.5-3 quart baking dish (attractive enough to bring to the table) with butter, oil, or cooking spray. Cube the bread and place in the dish in a single even layer. In a large skillet, cook the sausage, breaking it up with a spoon, until it's almost cooked through, about 5 minutes. Drain off the fat. Layer the sausage over the bread, and top with potatoes. Sprinkle the cheese on top. In a medium bowl, whisk together the eggs, milk, mustard powder, salt, and black pepper to taste. Pour the egg mixture over the sausage and potatoes in the casserole. Cover with plastic wrap and refrigerate overnight. When ready to cook the casserole, preheat the oven to 350 degrees fahrenheit. Bake the casserole until set and golden about 30 minutes. Serve hot.

Tips:

  • For a richer flavor, use a combination of cheeses, such as cheddar, mozzarella, and Parmesan.
  • Add cooked bacon, sausage, or ham for a protein-packed casserole.
  • To make the casserole ahead of time, assemble it the night before and refrigerate it overnight. In the morning, bake it as directed.
  • If you don't have a 9x13 inch baking dish, you can use a 10-inch skillet or a 12-inch pie plate.
  • Serve the casserole with a side of fruit, yogurt, or toast.

Conclusion:

A breakfast casserole is a delicious and easy way to feed a crowd. It's perfect for brunch, potlucks, or holiday gatherings. With so many variations to choose from, there's sure to be a breakfast casserole that everyone will enjoy.
