Time 50m

Yield 1 cup

Number Of Ingredients 13

3 teaspoons cumin seeds
2 teaspoons coriander seeds
5 cm. cinnamon sticks (or 1 tsp. ground cinnamon)
2 tablespoons light olive oil
1 onion, chopped
2 -3 garlic cloves, chopped
1 teaspoon ground sumac (or fine zest of 1 lemon)
1 (14 1/2 ounce) can tomatoes
2 -3 roasted red peppers, chopped
2 teaspoons brown sugar
2 teaspoons red wine vinegar
1/4 teaspoon chili flakes
salt & freshly ground black pepper

Steps:

  • Heat a large heavy-bottomed non-reactive pan on the stove and dry-fry the cumin and coriander seeds with the cinnamon stick. Once slightly browned and aromatic, take the spices off the heat and crush in a mortar and pestle or in a spice grinder.
  • Heat the oil in the same pan and add the onion and garlic. Fry for a few minutes until softened. Add the ground toasted spices and the sumac and cook for a further minute before adding the tomatoes. Half-fill the tomato can with water and add this with all the other ingredients, seasoning cautiously bearing in mind that the sauce will reduce. Simmer, lidded, over a very low heat for 20 minutes. Allow to cool slightly before whizzing up in the blender. Adjust seasoning. Serve hot or cold. Keeps for a week in the refrigerator.

Categories     Fish     Fry     Quick & Easy     Lemon     Spice     Summer     Cilantro     Parsley     Gourmet

Yield Serves 2

Number Of Ingredients 10

1/4 cup coarsely chopped fresh coriander
1/4 cup coarsely chopped fresh parsley leaves
1 garlic clove, minced
2 tablespoons fresh lemon juice
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/8 teaspoon cayenne, or to taste
3 tablespoons vegetable oil plus additional for frying the fish
1 pound skinless firm-fleshed white fish filet, such as cod or halibut, cut into 4 equal pieces
all-purpose flour seasoned with salt and pepper for dredging the fish

Steps:

  • In a food processor or blender purée the coriander, the parsley, the garlic, the lemon juice, the paprika, the cumin, the cayenne, 3 tablespoons of the oil, and salt and pepper to taste. In a skillet heat 1 inch of the additional oil to 375°F. on a deep-fat thermometer, dredge the fish in the flour, shaking off the excess, and in the oil fry it, turning it once, for 1-1/2 to 2 minutes on each side, or until it is cooked through. Transfer the fish to paper towels to drain, divide it between 2 plates, and drizzle the sauce over it.

Tips:

  • To enhance the flavor of your sauce, use ripe and juicy peppers. Roasting the peppers adds a smoky, charred flavor.
  • To adjust the heat level, choose peppers that suit your preference. You can also remove the seeds and ribs of the peppers to reduce the spiciness.
  • Experiment with different types of peppers to create a unique and flavorful sauce. Some popular options include jalapeños, serranos, and habaneros.
  • Add aromatic ingredients like garlic, onion, and ginger to create a more complex flavor profile.
  • Use a variety of spices and herbs to enhance the taste of your sauce. Common choices include cumin, coriander, paprika, and chili powder.
  • Adjust the consistency of your sauce by adding more or less liquid. You can use water, broth, or even coconut milk to achieve the desired texture.
  • Taste your sauce throughout the cooking process and adjust the seasonings as needed.
  • Serve your Moroccan pepper sauce with a variety of dishes, such as grilled meats, roasted vegetables, or couscous.

Conclusion:

Moroccan pepper sauce is a versatile condiment that adds a burst of flavor to any dish. With endless variations and customizable heat levels, it's a perfect sauce for those who love to experiment in the kitchen. Whether you're looking for a spicy kick or a smoky and aromatic sauce, Moroccan pepper sauce has something to offer everyone.
