Tips:

  • For the best results, use fresh corn kernels. You can use frozen or canned corn, but fresh corn will give you the best flavor and texture.
  • Be sure to drain the corn kernels well before adding them to the muffin batter. This will help to prevent the muffins from becoming too wet.
  • If you don't have any mozzarella cheese, you can substitute another type of cheese, such as cheddar or Parmesan.
  • You can also add other ingredients to the muffin batter, such as chopped bacon, green onions, or jalapeños.
  • Be sure to grease the muffin tins well before baking the muffins. This will help to prevent them from sticking.

Conclusion:

These mozzarella stuffed mini corn muffins are a delicious and easy-to-make snack or side dish. They are perfect for parties, potlucks, or picnics. The muffins are also great for freezing, so you can make a batch ahead of time and have them on hand when you need them.
