Great for the lazy days. You can adjust each ingredient to your desired consistency. I will substitute and go for the low fat or fat free stuff for the cheese and mayo.

2 slices of toasted bread
1 slice American cheese
1 (12 ounce) can tuna
1 tablespoon mayonnaise or 1 tablespoon Miracle Whip
1 tablespoon yellow mustard
crushed red pepper flakes
garlic powder
chopped nacho jalapenos or pepperoncini pepper

Steps:

  • Toast the bread.
  • Put the cheese on one slice (you may need to microwave for a couple seconds if it doesn't melt enough).
  • Mix together tuna and all other ingredients.
  • Throw in between bread slices.
  • Grab some chips and call it a day.

A searing, tongue igniting tuna melt that will satisfy the spicy food lover in your house. Served best with a pale ale (may need more than one to douse the flames on this bad boy). Feel free to adjust ingredients as desired.

2 teaspoons vegetable oil
½ cup chopped onion
½ cup chopped celery
1 pinch kosher salt
2 (5 ounce) cans tuna, packed in olive oil, drained
1 tablespoon spicy brown mustard
1 tablespoon mayonnaise
2 pinches cayenne pepper
1 teaspoon Cajun style blackened seasoning (Old Bay® recommended)
1 pinch dried parsley
1 teaspoon hot pepper sauce (e.g. Tabasco™)
2 slices pepperjack cheese
4 slices Italian bread

Steps:

  • Heat the vegetable oil in a skillet over medium heat. Add the onions and celery and season with a little kosher salt. Cook and stir until tender, about 5 minutes.
  • In a medium bowl, stir together the tuna, mustard, mayonnaise and the sauteed onion and celery. Season with cayenne, blackened seasoning, parsley, and hot pepper sauce. Spoon onto half of the bread slices. Top each one with a slice of pepperjack cheese and then the remaining slices of bread.
  • Spread butter onto the outsides of the sandwich. Fry in a skillet over medium heat until golden brown on the outside and cheese has melted, about 5 minutes total.

1 (170 g) can flaked tuna, in water, drained
1/4 cup Miracle Whip light
1/2 teaspoon spicy mustard
2 green onions, thinly sliced
1 stalk celery, thinly sliced
1/4 teaspoon black pepper
1/2 teaspoon lemon pepper
1/8 teaspoon cayenne pepper
2 slices bread
1/2 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 350.
  • Mix tuna, miracle whip, mustard, green onion, celery and spices.
  • Let stand 5 minutes.

This piquant open-face sandwich gets its kick from best-quality jarred salsa.

2 cans (6 ounces each) solid light tuna packed in water, drained and broken into pieces
3/4 cup (5 1/2 ounces) salsa
1/4 cup mayonnaise
Coarse salt and ground pepper
1 baguette
4 1/2 ounces pepper Jack cheese, grated (1 1/2 cups)
2 tablespoons fresh parsley, roughly chopped

Steps:

  • Heat broiler, with rack in top position. In a medium bowl, mix together tuna, salsa, and mayonnaise; season with salt and pepper. Cut baguette in half lengthwise and place, cut side up, on a rimmed baking sheet. Top with tuna mixture and pepper Jack cheese, and broil until cheese melts and begins to turn golden, 5 minutes. To serve, cut into pieces and sprinkle with parsley.
