16 Chicken wings
3 Tbsp. Tamarind paste
2 Tbsp. cane sugar
2 Tbsp. Red pepper flakes
2 Cloves of garlic
1 Tbsp. Fish sauce
1 oz. Sliced Chives, Green onions
2 Tbsp. Olive oil

Steps:

  • First, start with making the marinade. Add 3 Tbsp. of tamarind paste, 2 Tbsp in a med-sized bowl. Of cane sugar. Now, add a good amount of red pepper flakes and 2 cloves of crushed garlic and 1 Tbsp. Of fish sauce and 2 Tbsp. Of olive oil.
  • Put the chicken wings into the med-sized bowl and start rubbing the marinade onto the wings. Make to coat all the chicken wings with the entire amount of marinade. Now Cover the wings and put them into the refrigerator. Preferably marinate your chicken wings overnight; half an hour is enough to get the Asian flavors going if you don't have time.
  • Now line the baking sheet with aluminum foil on it. Place the chicken wings on the baking sheet.
  • Put the baking sheet in a 425°F degree oven for about 25-30 minutes; when finished cooking, place chicken wings onto the serving plate and sprinkle some chives or green onions on top.

1 cup orange juice
1 cup light soy sauce
1/2 cup brown sugar
1/2 cup sugar
1 teaspoon garlic powder
1/2 teaspoon ginger (I used chopped up fresh the last time I made it)
3 lbs chicken wings

Steps:

  • If you are using frozen chicken wings, defrost them first. If you prefer, cut off tips of wings.
  • Preheat oven to 350 degrees.
  • Mix all the ingredients (except for chicken wings) together in a bowl.
  • Spray a 9x11 baking dish with Veg. Oil spray. Place chicken wings in single depth in the pan.
  • Pour the mixture over the chicken wings and place in oven.
  • Bake for 30 minutes, then turn wings. Bake for another 30 minutes, and turn wings again.
  • Increase heat to 375 and bake for final 30 minutes, and then they are done.
  • Take out of cooking liquid to serve or keep warm till serving.

1/4 cup chopped green onions
1/4 cup celery heart finely chopped
1/8 cup sugar
1/4 cup plus 1 tablespoon finely chopped raw shrimp
2 cups finely chopped white onions
1/4 cup finely chopped fresh cilantro
2 ounces wooden black mushrooms, chopped
1 pound ground pork
Salt
Freshly ground black pepper
Fish sauce, to taste
12-18 large chicken wings
Creole seasoning, recipe follows
1 1/2 cups all-purpose flour
Lettuce
2 cups Hoisin Sauce, recipe follows
2 tablespoons finely chopped parsley
1/4 cup chopped roasted peanuts
1 tablespoon dried thyme
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
2 1/2 tablespoons paprika
1 tablespoon cayenne pepper
1 tablespoon dried oregano

Steps:

  • Preheat the oven to 325 degrees F. In a mixing bowl, combine the green onions, celery, sugar, shrimp, white onions, cilantro, mushrooms and pork together. Mix thoroughly. Season with salt, pepper, and fish sauce. Slice the wing along the bone in order to leave the skin and meat attached. Sever the first joint of the chicken wing and remove the bones. Holding tight to keep the joint intact, slide the knife along the underside of the skin and separate all the way to the joint. Season each chicken wing inside and out with Creole seasoning. Roll back the skin, remove the bones and cup the edges of the skin to begin stuffing the forcemeat into the cavity. Stuff the entire section of the skin and lop the leftover meat and skin over the top to "close" the wing. Place the wings on a baking sheet and bake for 20 minutes. Remove the wings from the oven and cool completely. Season the flour with Creole seasoning. Dredge the wings in seasoned flour. Preheat the fryer. Carefully lay the wings in the hot oil and fry 3 to 4 minutes or until golden brown and crispy. Fry the wings in batches. Remove and drain on a paper towels. Season with Creole seasoning. Arrange the wings on top of the lettuce. Drizzle the sauce over the wings and lettuce. Garnish with parsley and chopped peanuts. Serve warm.

16 whole chicken wings, flap segments removed and saved for stock
1/3 cup sake
1/3 cup soy sauce
4 tablespoons brown sugar (see Cook's Note)
3 tablespoons mirin
3 tablespoons oyster sauce
4 large thin slices fresh ginger
2 cloves star anise
1 dried hot chile
1 cinnamon stick
Shaved green onions, for garnish
Sesame seeds, for garnish

Steps:

  • Place a 14-inch nonstick saute pan over high heat. Add the chicken and dry-sear to lightly brown the chicken. Add the sake, soy sauce, 1/3 cup water, brown sugar, mirin, oyster sauce, ginger, star anise, dried chile and cinnamon stick and bring to a simmer. Cook, covered, about 12 minutes.
  • Uncover and simmer until the pan is almost dry, tossing frequently to coat the wings, 10 to 12 minutes. Skim off the fat if you like, and serve, garnishing with scallion shavings and sesame seeds. I like to emulsify the chicken fat into the sauce by turning up the heat at the last minute to boil the fat into the other liquids.

2 cups soy sauce
2 cups brown sugar
2 tablespoons garlic powder
5 pounds chicken wings, split and tips discarded

Steps:

  • Stir the soy sauce, brown sugar, and garlic powder together in a saucepan over medium heat; cook and stir until the sugar melts completely. Remove from heat and allow to cool.
  • Place the chicken wings in a large bowl. Pour the soy sauce mixture over the wings and toss to coat evenly. Cover the bowl with plastic wrap. Allow chicken to marinate in refrigerator overnight or 8 hours.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Pour the chicken wings and marinade into a 9x13-inch baking dish. Cover the baking dish with aluminum foil.

Chinese Marinade:
1 1/4 cups soy sauce
1 1/4 cups rice wine or sake
1 cup water
12 whole scallions, ends trimmed, smashed with the flat side of a knife
10 cloves garlic, smashed with the flat side of a knife
2 1/2-inch chunk fresh ginger, peeled, then cut into 10 slices about the size of a quarter, each smashed with the flat side of a knife
3 1/2 to 4 pounds chicken wings (about 20), rinsed and drained

Steps:

  • Stir the Chinese Marinade ingredients in a saucepan and heat until boiling. Reduce the heat to low and simmer for 10 minutes. Let the marinade cool slightly.
  • With a sharp knife separate the drumettes from the wingtips at the joint. Place all the pieces in a bowl or a deep pan and add the still-warm marinade. Stir to coat, cover with plastic wrap, and let the wings marinate for several hours, or overnight if possible, in the refrigerator.
  • Preheat the oven to 500°F. Line a cookie sheet with aluminum foil and arrange the wings on the cookie sheets. Brush liberally with the marinade. Roast for about 40 minutes, turning once, until the wings are cooked and crispy brown at the edges. Serve hot, at room temperature, or cold as an appetizer or an entr e with a vegetable and steamed rice.

1/2 teaspoon pepper
15 whole chicken wings (about 3 pounds)
