MUSHROOM LEMON CHICKEN

Mushroom Lemon Chicken image

A friend of mine had shared this delicious recipe for chicken years back and it has been a favorite of ours ever since.

Provided by Shelley Simpson

Categories     Chicken

Time 30m

Number Of Ingredients 7

4 boneless/skinless chicken breast halves - (each cut in half)
1/2 lb. fresh mushrooms, sliced
1/4 cup lemon juice (fresh is best)
4 tablespoons butter or margarine
flour
salt and pepper to taste
1 teaspoon of dried parsley

Steps:

  • 1. In a plastic bag, add enough flour in which to coat your chicken. Add salt and pepper to your taste. Place the chicken in the bag and shake to coat them. In a skillet, heat the butter and add the coated chicken and cook until golden brown on both sides.
  • 2. Then sprinkle the golden browned chicken with the parsley and the lemon juice and cover and cook on low for another five minutes. Add the mushrooms. Cover again with lid tightly and let steam for a 2 minutes. Remove from the heat and let stand covered for 5 minutes.

Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid scrambling later on.
  • Choose the right mushrooms: Cremini mushrooms are a good all-purpose mushroom for this dish, but you can also use shiitake, oyster, or portobello mushrooms. Just be sure to slice them evenly so they cook evenly.
  • Don't overcrowd the pan: When searing the chicken, don't overcrowd the pan or the chicken will steam instead of sear. Cook the chicken in batches if necessary.
  • Cook the chicken until it's golden brown: Don't be afraid to let the chicken get a little brown. This will give it a nice flavor and help to keep it moist.
  • Use a flavorful broth: The broth you use to deglaze the pan will add a lot of flavor to the sauce. Use a good-quality broth that you enjoy the taste of.
  • Reduce the sauce: Simmer the sauce until it has reduced by about half. This will concentrate the flavors and make the sauce more flavorful.
  • Serve immediately: This dish is best served immediately, while the chicken is still hot and juicy. It can be served over rice, noodles, or mashed potatoes.

Conclusion:

This mushroom lemon chicken is a quick and easy weeknight meal that is sure to please the whole family. The chicken is tender and juicy, the sauce is flavorful and creamy, and the mushrooms add a nice earthy flavor. Serve it over your favorite rice or pasta for a complete meal.
