6 bacon strips, diced
3 cups cubed peeled potatoes
1 small carrot, grated
1/2 cup chopped onion
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon celery seed
1 can (14-1/2 ounces) chicken broth
3 tablespoons all-purpose flour
3 cups 2% milk
8 ounces Velveeta, cubed
2 green onions, thinly sliced, optional

Steps:

  • In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally; drain drippings. Add vegetables, seasonings and broth; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-15 minutes., Mix flour and milk until smooth; stir into soup. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Stir in cheese until melted. If desired, serve with green onions.

A recipe for potato soup was given to me by a friend and over the years I've modified it to suit my own taste. Every time I make this soup, I do something a little different, but this is the basic point from which I start. Prep and cooking times are approximate.

5 lbs yukon gold potatoes
1 small yellow onion
10 1/4 ounces 98% fat free condensed cream of celery soup
16 ounces French onion dip
2 cups 2% low-fat milk
3 ounces light processed cheese
garlic powder
salt
pepper

Steps:

  • Peel and dice potatoes. Chop onion. Place both in pot with just enough water to cover and boil until potatoes are just tender. Drain, leaving about 1 inch water in bottom of pot.
  • Mash potatoes to the consistency of your liking (I like my soup a little chunky, so I mash about 1/2 of the potatoes and leave the other half as is).
  • Add in cream of celery soup (you can use any kind of cream soup you may like if celery is not your favorite), milk (you may use less or more than 2 c, again depending on the consistency you may like), french onion dip (may use FF or Lite onion dip to lower calories or, sour cream may also be substituted for less of an onion taste) and cheese (I use 2% Velveeta).
  • Add seasoning to your taste and gently mix until all ingredients are blended.
  • Let simmer on low until cheese is melted, stirring occasionally.

Steps:

This is the best potato soup ever!!! My boyfriend's mom gave me a recipe similar to this, but over time I adjusted the ingredients until it was just right! Absolutely delicious and 10 X more delicious the next day!!! This is the only soup we eat in winter, it is just awesome!!!

8 -10 medium potatoes
3 large yellow sweet onions, diced
1 (10 3/4 ounce) can cream of chicken soup
1 (12 ounce) can evaporated milk
8 tablespoons parsley, a 1 . 25 oz. bottle
4 cups water
3 tablespoons butter
salt
pepper

Steps:

  • (*The main thing for this recipe is the Parsley! It is very important!*).
  • Peel potatoes and cut them into big bite-sized chunks.
  • Add the 4 cups of water to a big pot, then add all of the potatoes. Add parsley at the same time -- usually half of a 1.25 oz bottle, about 6 tbs of parsley.
  • (*the parsley should be very thick in the pot*).
  • Bring to a boil then turn stove down to medium high, let boil for 15 minutes, or until potatoes are "cooked".
  • Immediately add the can of cream of chicken and the can of evaporated milk, all of the onions, and 2-3 more tbs of parsley.Don't use the entire 1.25 oz bottle, should be about a tbs left in the bottle.
  • While potatoes are cooking, dice the onions, can have big pieces of onions and slices as well -- the onions don't have to be diced into tiny little bits. It is better if the diced onions are bigger dices.
  • Let all ingredients cook for about 20-30 minutes on medium or medium low. Halfway through turn down to low-medium. Add salt and pepper, and more butter if needed.
  • (*I usually don't eat butter in my bowl, so I usually don't add the butter to the pot, just to the individual bowls, but this, again, is just another idea*).
  • (*can replace the cream of chicken with cream of mushroom to make it more of a vegetarian meal*).
  • The next day this is even better. I have even thought about cooking it and not eating it till the next day -- but this soup is too irresistable for me to be able to do this!:).

4 large potatoes, peeled and cubed
salt
2 carrots, chopped
1 small parsnip, peeled and chopped (optional)
1/2 lb mushroom, chopped (optional)
fresh parsley, to taste
fresh dill, to taste
1 garlic clove, minced (to taste)
1 large onion, diced
1 tablespoon flour

Steps:

  • Put potatoes in a soup pot and add water to cover, plus another few inches. Salt and bring to a boil.
  • Once boiling, add the carrots, optional parsnips and s, parsley, dill, garlic.
  • Bring to a boil, then simmer for about 1 hour.
  • While soup is boiling, saute the onion in oil in a skillet. When the onions are golden, add flour to make a roux. Thin with a little bit of water. Bring to a boil to thicken and then add to the soup.
  • Simmer a few more minutes and season to taste.

Steps:

6 -8 medium potatoes
1/4 cup butter
1/2 cup flour
6 cups milk
2 teaspoons chicken bouillon
1/2 teaspoon salt

1/2 lb cheddar cheese

  • Peel, cube, boil, drain and "mush" potatoes to the consistency you like (I like them lumpy, but my kids like smaller pieces).
  • In separate pan, melt butter, add flour and cook while stirring for about a minute or so.
  • Add half the milk and stir until lumps are out of flour mixture.
  • Add remaining milk and on med-high heat, heat to a boil.
  • Stir almost constantly or it will scorch.
