Number Of Ingredients 9

1/2 pound nectarines (about 4), cut into 1/2-inch pieces
1 tablespoon fresh lemon juice
1/4 cup plus 2 teaspoons granulated sugar
2 cups all-purpose flour, plus more for work surface
1 tablespoon baking powder
1/2 teaspoon coarse salt
6 tablespoons cold unsalted butter, cut into small pieces
1 cup heavy cream, plus more for brushing
Fine sanding sugar, for sprinkling

Steps:

  • Preheat oven to 400°F. Combine nectarines, lemon juice, and 2 teaspoons granulated sugar. Let stand 15 minutes.
  • Whisk together the flour, baking powder, salt, and remaining 1/4 cup granulated sugar in a large bowl. Using a pastry blender, cut in the butter until mixture forms small pieces. Stir in the cream. Fold in nectarine mixture.
  • Turn out dough onto a lightly floured surface. Pat into an 8 1/2-inch round. Using a 2 1/2-inch cutter, cut out 8 rounds, and transfer to a parchment-lined baking sheet. Brush with cream; sprinkle with sanding sugar. Bake until golden brown, 20 to 25 minutes. Let cool on a wire rack. Any remaining shortcakes can be stored in an airtight container up to 1 day.

Tips:

  • To easily halve and pit nectarines, score a shallow line around the center of each nectarine, then twist the halves apart and remove the pit.
  • For the best flavor, use ripe, juicy nectarines. If your nectarines are not ripe, you can ripen them by placing them in a paper bag with an apple or banana for a few days.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
  • To make sure your shortcakes are light and fluffy, be sure to not overmix the batter.
  • For a sweeter shortcake, brush the tops with melted butter and sprinkle with sugar before baking.
  • For a more decadent shortcake, top with whipped cream, ice cream, or your favorite fruit.

Conclusion:

These nectarine shortcakes are a delicious and easy summer dessert that can be enjoyed by people of all ages. With a few simple ingredients, you can create a delightful treat that is perfect for any occasion. Whether you are hosting a party or just want a special dessert for your family, these nectarine shortcakes are sure to be a hit.
