THE BEST BEAN AND HAM SOUP

The Best Bean and Ham Soup image

I make this hearty soup using the ham bone from our Easter spiral ham. I serve it with corn muffins and fresh fruit. It makes a huge pot of soup, so invite some friends or just freeze several portions for later use. Remember to soak the beans the night before you make the soup.

NEIGHBORHOOD HAM AND BEAN SOUP

Neighborhood Ham and Bean Soup image

The flavors in this bean soup remind me of the bean soup my grandmother used to make on our farm in Ohio when I was a young girl. I love to make it during the winter months -- it doesn't last long. My daughter is now making it for her family as well. Maybe it's called "Neighborhood" bean soup because the neighbors love it when I make it -- it's a wonderful soup to share with special friends. It is great served wtih a nice piece of hot corn bread. I can't remember exactly where I found the recipe -- but I'm glad I have it and I hope you will feel the same.

1 teaspoon dried thyme
1/2 teaspoon dried marjoram
1/2 teaspoon pepper
1/4 teaspoon rubbed sage
1/4 teaspoon dried savory

1 large potato, cut into cubes (optional, but very good)
1 tablespoon vegetable oil

Steps:

  • Place beans in a Dutch oven or soup kettle; add water to cover by 2".
  • Bring to a boil; boil for 2 minutes.
  • Remove from heat, cover and let stand for 1 hour. Drain.
  • Add broth, water, ham bone, bouillon and seasonings; bring to a boil.
  • Reduce heat; cover and simmer for 2 hours (I find I usually add at least an hour to this).
  • Sauté' onions, carrots and celery in oil; add to soup along with cubed potato (if using).
  • Cover and simmer 1 hour longer.
  • Debone ham and cut into chunks; return to soup.
  • Skim fat (I find I don't have any to skim).

HAM-AND-BEAN SOUP RECIPE

Ham-and-Bean Soup Recipe image

A leftover Easter ham bone is the foundation for this easy, hearty meal.

Provided by Paige Grandjean

Time 6h15m

Yield Serves 8

Number Of Ingredients 10

6 cups unsalted chicken stock
1 pound dried Great Northern beans, sorted of debris and rinsed
1 tablespoon chopped fresh thyme
1 ½ teaspoons kosher salt
½ teaspoon black pepper
3 garlic cloves, chopped (about 1 Tbsp.)
3 celery stalks, cut into 1/2-inch pieces (about 1/2 cup)
2 large carrots, cut into 1/2-inch pieces (about 1 cup)
1 small yellow onion, cut into 1/2-inch pieces (about 1 cup)
1 large, meaty ham bone (about 4 lb.)

Steps:

  • Stir together chicken stock, Great Northern beans, thyme, salt, pepper, garlic, celery, carrots, and onion in a 5- to 6-quart slow cooker. Place ham bone in the center of mixture; cover and cook on HIGH until beans are tender, about 6 hours. Remove ham bone; let stand until cool enough to handle. Remove meat from bone; discard fat, gristle, and bone. Shred meat, and stir into soup.

Tips:

  • Soak the beans overnight: Soaking the beans overnight will help to reduce the cooking time and make them more digestible. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Use a variety of beans: Using a variety of beans will give your soup a more complex flavor and texture. Some good options include navy beans, pinto beans, black beans, and kidney beans.
  • Add vegetables to your soup: Vegetables will add flavor, nutrition, and color to your soup. Some good options include carrots, celery, onions, and potatoes.
  • Use a flavorful broth: The broth is the base of your soup, so it's important to use a flavorful one. You can use chicken broth, beef broth, or vegetable broth. If you're using a canned broth, be sure to choose one that is low in sodium.
  • Season your soup to taste: Season your soup with salt, pepper, and other spices to taste. You can also add a bay leaf or two for extra flavor.
  • Serve your soup with a side of bread or crackers: A side of bread or crackers will help to soak up the soup and make it a more filling meal.

Conclusion:

Ham and bean soup is a delicious, hearty, and affordable meal that is perfect for a cold winter day. It's also a great way to use up leftover ham. With a few simple tips, you can make a pot of ham and bean soup that your family and friends will love. So next time you're looking for a comforting and satisfying meal, give ham and bean soup a try.
