NEIMAN MARCUS' TORTILLA SOUP CON QUESO
This now classic soup was created in the early 1970's when Tex-Mex was becoming popular. It's still a favorite nation wide. Note: This is a good make ahead soup, however if you are making it for future use, do not add the cream, cheese or tortilla chips until just before serving. Store soup in the frig or freezer and add the omitted ingredients before serving.

FABULOUS CHILE CON QUESO SOUP (TORTILLA)
This recipe is from the Neiman Marcus cookbook, Pure and Simple. It was served in their Dallas store. Not low calorie, but so yummy! Great on a cold winter day or for a super bowl party. This calls for fried tortilla strips, but when I'm in a time crunch I just serve with tortilla chips.

AUNT KATHY'S TORTILLA SOUP
This is now a favorite in my husband's family in Canada after my aunt sent it with me when I moved up from California. We make this with whatever broth is abundant. Garnish with Mexican cheese blend, sour cream, salsa, and sliced avocado. This soup is an especially tasty way to use up the turkey after holidays! It freezes well, too!

Tips:
- Use fresh ingredients: Fresh ingredients, especially vegetables and herbs, will give your tortilla soup the best flavor. If possible, buy organic produce to avoid pesticides and herbicides.
- Roast your vegetables: Roasting vegetables intensifies their flavor and sweetness. This is a great way to add depth of flavor to your soup. You can roast vegetables on a sheet pan in the oven or on a grill.
- Use a good quality chicken broth: The chicken broth is the base of your soup, so it's important to use a good quality broth. Look for a broth that is low in sodium and made with real chicken. You can also make your own chicken broth by simmering chicken bones in water with vegetables and herbs.
- Don't overcook the chicken: Overcooked chicken is tough and dry. Cook the chicken until it is just cooked through, about 10 minutes per side.
- Add a variety of toppings: Tortilla soup is a great dish for customizing with your favorite toppings. Some popular toppings include cheese, sour cream, avocado, cilantro, and tortilla chips.
Conclusion:
Tortilla soup is a delicious and easy-to-make soup that is perfect for a quick and healthy meal. With its combination of fresh vegetables, tender chicken, and flavorful broth, tortilla soup is a surefire hit. So next time you're looking for a delicious and nutritious meal, give tortilla soup a try. You won't be disappointed!
