FAT FREE ITALIAN DRESSING

Fat Free Italian Dressing image

I tweaked our favorite Italian Dressing recipe so it was healthier and more WW friendly. The original recipe (which is Recipe #20158) is fantastic, but it is 2 points plus per Tablespoon. This version is 1 point plus for the WHOLE recipe! We use it on salads, Italian subs, pasta, chicken and even as a dip for bread. You can use red or white wine vinegar. I actually prefer the taste of the red, but it looks more like Italian dressing if you use the white.

NO SALT VINAIGRETTE

No Salt Vinaigrette image

I get raves when I bring tossed salads to dinner parties because I also make my own dressing. This vinaigrette is quite easy, using staples from your pantry and doesn't use salt! Bulk up on the lemon juice for extra zing. You can also substitute tarragon vinegar for a different feel. Serve over a tossed salad, antipasto, or as a quick marinade for beef, chicken, or pork.

Time 10m

Yield 1 cup, 1 serving(s)

Number Of Ingredients 6

3/4 cup water
1/4 cup balsamic vinegar
3 teaspoons capers
2 teaspoons Dijon mustard
1 1/2 teaspoons dried basil
1 tablespoon fresh parsley, chopped

Steps:

  • Combine the ingredients.
  • Adjust vinegar to taste, since it has a strong flavor.
  • Store in a covered container in the refrigerator.

Tips:

  • Use fresh ingredients: The fresher your ingredients, the better your dressing will taste. Opt for ripe, flavorful fruits and vegetables, and use herbs that are still green and fragrant.
  • Experiment with different vinegars and oils: There are many different types of vinegar and oil that you can use to make a no-fat salad dressing. Try experimenting with different combinations to find a flavor profile that you enjoy. Some popular options include apple cider vinegar, white vinegar, red wine vinegar, olive oil, and avocado oil.
  • Add some sweetness: A little bit of sweetness can help to balance out the acidity of the vinegar. You can add sweetness with honey, maple syrup, or agave nectar. You could also use a naturally sweet fruit, such as a mango or pineapple.
  • Season to taste: Once you've combined all of your ingredients, taste the dressing and adjust the seasonings as needed. You may want to add more salt, pepper, or herbs.
  • Let the dressing chill: Allowing the dressing to chill for at least 30 minutes before using allows the flavors to meld and develop.

Conclusion:

No-fat salad dressings are a delicious and healthy way to add flavor to your salads. They're also a great way to use up leftover vegetables and fruits. With a little creativity, you can create endless flavor combinations that will make your salads more enjoyable.
