This is a recipe that my grandmother used to make every Thanksgiving. She used to stuff her turkey with it, but I've decided that I like it better just as a casserole. It's a family favorite.

2 lbs ricotta cheese
1/2 lb mozzarella cheese, shredded
1 egg
1/4 cup parsley, chopped
1/2 small onion, chopped
1/2 stalk celery, finely chopped
1/4 lb vermicelli, cooked al dente
1/4 lb provolone cheese, sliced
1 cup shredded romano cheese or 1 cup parmesan cheese
1/2 lb mushroom, chopped into pieces
2 garlic cloves, minced
1/2 lb pancetta (italian bacon) or 1/2 lb Canadian bacon
1/2 lb ground sirloin
2 tablespoons olive oil
salt, pepper, and oregano (to personal taste)

Steps:

  • Preheat oven to 350 degrees.
  • Cut pacetta or Canadian bacon into pieces.
  • Break pasta in half and boil it until it's still a little hard.
  • Drain pasta and set aside.
  • In a skillet heat the olive oil.
  • Sauté celery, mushrooms, and onion until tender.
  • Add meat and spices and cook until meat is brown; set aside.
  • Mix all other ingredients in a large bowl.
  • Add to meat mixture and blend well.
  • Pour into a baking dish and cook until cheese is melted and pasta is thoroughly cooked (about 30 minutes).
  • Note: You may want to boil some extra pasta to serve with this because the dish by itself is very rich. The mushroom pieces should be sized to the cooks personal taste. I prefer bigger pieces while my mother likes smaller. Canadian bacon works just great.

1/2 medium red onion, coarsely chopped
2 large cloves garlic, coarsely chopped
7 to 8 large fresh sage leaves, torn into small pieces
Extra virgin olive oil
Generous pinch hot red-pepper flakes
Salt and freshly ground black pepper
1 pound spaghetti, tagliarini or linguine
7 large eggs
2 cups (about 8 ounces) pecorino Toscano, shredded

Steps:

  • Bring a large pot of salted water to a boil. Chop onion, garlic and sage together until fairly fine. Generously film a 12-inch sauté pan with olive oil, and set over medium heat. Stir in onion mixture, and sprinkle with red pepper, salt and black pepper. Sauté until wilted, about 3 or 4 minutes. Take the pan off the heat and cover.
  • Drop pasta in boiling water. Cook, stirring often, until slightly underdone.
  • Scoop out about 1 cup of pasta water and reserve. As pasta gets close to being done, put the sauté pan over medium-low heat. Once it is warmed up, break the eggs into the pan, and cook a few minutes, until white is barely opaque.
  • Meanwhile, drain pasta in colander. Turn into pan with eggs, and toss for a few minutes over medium-low heat until the eggs cling to the pasta. Add a little reserved pasta water to loosen it up, if necessary. Taste for seasoning; be generous with black pepper. Serve in heated bowls, passing cheese at the table.

This recipe is so easy and so yummy. We have it often at my house on those busy weeknights when I'm just too tired to get crazy in the kitchen. I usually serve this dish with cottage cheese and garlic bread as sides. It's my 16 year-old, pasta-loving son's favorite! We hope you'll love it too! OPTIONAL: You can add 1 pound of browned and drained hamburger or Italian sausage or throw in some pepperoni slices if your family likes it meaty!

Number Of Ingredients 8

1 (26 ounce) jar of your favorite spaghetti sauce
1 (26 ounce) sauce jar filled with water (and a splash of red wine if you like)
1 (15 ounce) can tomato sauce
16 ounces ziti pasta or 16 ounces rigatoni pasta, uncooked
2 teaspoons italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon ground oregano
8 ounces shredded mozzarella cheese (Italian-blend is tasty)

Steps:

  • Stir all ingredients, except the cheese, into a sprayed 9 x 13 casserole dish.
  • Cover tightly with foil. Bake at 425°F for 45 minutes.
  • Uncover and bake 10-15 minutes more.
  • Stir in 1/2 the shredded cheese and top with the other 1/2.
  • Return to oven just until the cheese on top is nice and melty.
