Tips:

  • Choose ripe, juicy mandarins: Look for mandarins that are firm and heavy for their size, with a deep orange color. Avoid any mandarins with blemishes or bruises.
  • Segment the mandarins carefully: Use a sharp knife to cut off the top and bottom of each mandarin, then slice along the sides of the fruit to remove the peel. Be careful not to cut into the flesh of the fruit.
  • Toast the nuts for extra flavor: Toasting the nuts in a dry skillet over medium heat for a few minutes will enhance their flavor and make them more crunchy.
  • Use a light, citrusy dressing: A simple dressing made with olive oil, lemon juice, and honey is a great way to complement the sweet and tangy flavors of the mandarins and nuts.
  • Serve the salad immediately: This salad is best enjoyed fresh, so serve it immediately after assembling.

Conclusion:

This nutty mandarin salad is a refreshing and delicious way to enjoy the flavors of winter citrus. The sweet and tangy mandarins are a perfect match for the crunchy nuts and creamy goat cheese, and the light, citrusy dressing brings it all together. This salad is perfect for a light lunch or dinner, and it's also a great way to use up any leftover mandarins you may have.
