Old Bay-Spiced Fish Sticks with Creamy Celery Root and Carrot Slaw image

Kids and grown-ups alike will love this upgrade on classic fish sticks. And with a cornmeal coating, they're naturally gluten-free. The creamy dipping sauce doubles as a dressing for the salad, so you don't have to mix up two different sauces to get dinner on the table.

For the dipping sauce and slaw:
1/2 cup plain Greek yogurt
1/4 cup mayonnaise
2 tablespoons country-style Dijon mustard
1 teaspoon honey or agave nectar
1/4 teaspoon ground coriander
6 tablespoons lemon juice, divided (about 2 lemons)
Kosher salt
2 large carrots, peeled
1/2 large celery root, peeled
1/2 cup parsley leaves, roughly chopped
Freshly ground black pepper
For the fish sticks:
2 large eggs, beaten
1/4 cup cornstarch
1 cup stone-ground yellow cornmeal
1 tablespoon plus 2 teaspoons Old Bay seasoning
1 pound firm white fish (such as cod), cut into 16 even strips, about 3x1" each
Kosher salt
1/4 teaspoon freshly ground black pepper
Grapeseed or other neutral oil (for frying)

Steps:

  • Make the dipping sauce and slaw:
  • Whisk yogurt, mayonnaise, mustard, honey, coriander, 3 Tbsp. lemon juice, and 1/2 tsp. salt in a large bowl. Set aside 3/4 cup for dipping sauce. Using the coarse grater disk on a food processor or the largest holes on a box grater, coarsely shred carrots and celery root. Add carrots, celery root, parsley, and remaining 3 Tbsp. lemon juice to remaining yogurt mixture and toss to combine. Season slaw with salt and pepper.
  • Make the fish sticks:
  • Place eggs, cornstarch, and cornmeal in 3 separate medium bowls. Add Old Bay to cornmeal and stir to combine.
  • Pat fish dry, then season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Working in batches, dredge fish in cornstarch, shaking off excess, then coat with egg, allowing excess to drip back into bowl, then coat with cornmeal mixture, pressing to adhere and shaking off excess, and transfer to a plate.
  • Pour oil into a large skillet to a depth of 1/4". Heat oil over medium-high until shimmering, hot, and an instant-read thermometer registers 350°F. Reduce heat to medium and, working in 2 batches, cook fish until golden brown and cooked through, about 2-3 minutes per side. Transfer to a paper towel-lined plate and season with salt. Serve fish sticks with dipping sauce and slaw.
  • Do Ahead
  • Fish sticks can be coated, covered, and chilled up to 2 days ahead, or freeze on a rimmed baking sheet, transfer to re-sealable plastic bags, and store in freezer up to 3 months. Frozen fish sticks don't need to be defrosted, but cook time will be 2 to 3 minutes longer.

4 celery ribs, with some leaves
1 small red chile
15 ml oil
4 teaspoons sugar
30 ml soy sauce

Steps:

  • Cut the celery sticks into 4cm lengths, then finely shred these vertically.
  • Slice the chilli thinly.
  • Heat the oil in a fry pan, and add the celery, chilli and sugar.
  • Stir-fry over a moderate heat for 1 minute, then add the soy sauce and continue stir frying for a further minute or two and until all the liquid has evaporated.
  • To keep the celery crisp, evaporate the liquid quickly.

FISH WITH CELERY ROOT, KALE AND MUSHROOMS

6 apples, cored and chopped
1 cup sparkling cider
1 tablespoon sherry vinegar
Dash of cayenne pepper
3 medium celery roots, peeled and cut in 1/4-inch strips
12 little onions, unpeeled
4 tablespoons olive oil
6 fillets of skate or a firm white fish (boneless, skinless chicken breasts may also be used)
1 1/2 ounces dried porcini mushrooms, ground as finely as possible in a spice mill or food processor
1 tablespoon walnut oil
3 cups cremini or button mushrooms, sliced
1 bunch kale, leaves torn from rib
1 lemon

Steps:

  • Preheat oven to 350 degrees.
  • Cook apples, 3/4 cup of the cider, vinegar and cayenne in a skillet over medium heat for about 30 minutes, or until soft, like apple sauce. When done, turn heat to low.
  • Meanwhile, toss celery roots and onions in a tablespoon of the olive oil, then spread on baking sheet and roast for 30 minutes in oven.
  • Coat fish in the dried mushrooms; then, saute at high heat in a mixture of one tablespoon of the olive oil combined with the walnut oil for a few minutes on each side. Then, put in oven for a few minutes. Fish are cooked when flaky. (Chicken breasts may take slightly longer to cook in the oven.)
  • Peel the onions.
  • Saute sliced mushrooms in the remaining olive oil. Add kale and cook for a minute or two; then, add the onions, celery root, juice of one lemon and the remaining cider and mix together.
  • To serve, spread apple sauce on a plate; put fish or chicken or top of that, and put vegetable mixture on top of that.

2 celery heads, trimmed
50g butter
1 onion , thinly sliced
2 bay leaves
100g breadcrumb
50g walnut , roughly chopped
75ml white wine
250ml vegetable or chicken stock
100ml double cream
25g grated parmesan (or vegetarian alternative)

Steps:

  • Cut any thick celery stalks in half, trim all of it into thumb-size lengths, then wash and leave wet. Melt half the butter in a large frying pan, then add the celery, onion and bay leaves. Season, cover, then cook over a medium heat for about 30 mins, stirring occasionally to stop the onions catching.
  • Meanwhile, prepare the breadcrumbs. Melt the remaining butter in a separate pan, then toss in the crumbs and walnuts, stirring often until lightly golden and toasted. Set aside.
  • Heat grill to medium. When the celery is tender, turn the heat right up, pour in the wine and stock, then reduce by two-thirds. Pour in the cream, then reduce for a final few mins until you have a syrupy sauce. Check seasoning, tip into an ovenproof dish, then scatter with the breadcrumbs and Parmesan. Grill for 2-3 mins, until the sauce bubbles. Let it sit for 5 mins before serving.

1 pinch seasoned salt, to taste

This is a super simple and tasty side dish. I think celery is an underused vegetable and this is a nice way of using it. The vegetable stock can be a little bit salty so if you don't use a low sodium variety this is best served with a meal that doesn't otherwise have a lot of salt.

2 cups vegetable stock
4 ounces celery, chopped
7 ounces carrots, chopped to medium thickness

Steps:

  • Put stock in medium sized pot and bring to a rapid boil.
  • Add the carrots and the celery to the pot.
  • Boil for about 10 to 12 minutes or until the carrots are tender.
  • Scoop out the veggies and serve. Most of the liquid will be boiled away so you can simple discard that but if I am serving plain rice I will often spoon it over the top since it is tasty and there isn't much of it.
