Time 1h10m

Yield 4 servings

Number Of Ingredients 11

2 frozen puff pastry sheets, defrosted
1 tablespoon butter
1 tablespoon olive oil
1/4 cup finely sliced red onion
1/4 cup finely sliced onion
2 scallions, finely sliced
1 tablespoon finely chopped chives
1 egg
1/3 cup heavy cream
1 teaspoon salt
3 ounces goat cheese

Steps:

  • Preheat oven to 375 degrees F.
  • Take a 2 1/2-inch round cookie cutter and cut out 12 rounds from 2 sheets of puff pastry. Take a 12 hole mini muffin pan and place rounds of dough into each hole, pressing gently to form a cup and giving room for the filling. Cover with plastic wrap and keep the prepared pan in the refrigerator or freezer (depends how long until you need it).
  • In a skillet add butter and oil. Throw in the onions and cook gently until softened and caramelized, stirring frequently for about 15 to 20 minutes. Once cooked add the scallions and chives. Set aside to cool slightly.
  • In a bowl whisk together the egg, cream, and salt. Add the cooked onions to the custard, stirring thoroughly. Pour into the prepared pastry cups with a spoon. Break up the goat cheese and place on top of tarts. Bake for 20 to 25 minutes. Serve.

Time 50m

Yield 24 mini tarts

Number Of Ingredients 9

24 frozen mini tart shells
2 tablespoons olive oil
2 lbs yellow onions, peeled and thinly sliced
1 teaspoon salt
2 tablespoons white wine
1 teaspoon fresh ground black pepper
2 ounces gruyere or 2 ounces emmenthaler cheese, finely grated
1 teaspoon fresh thyme, plus extra for garnish
1 egg, slightly beaten

Steps:

  • In a medium skillet, heat olive oil over medium heat. Add onions and salt. Cook onions, stirring occasionally, until they are golden brown, about 30 minutes. Add wine and cook for 2 minutes. Remove onions from heat and stir in pepper. Let cool slightly.
  • Place the tarts on a lined baking sheet. Sprinkle half of the cheese over the bottom of each tart shell. Spoon onions into the shell and spread evenly. Sprinkle thyme over the onions. Brush the exposed crust of each tartlet with the egg wash. Sprinkle with remaining cheese.
  • Bake in a preheated 375 F oven until the onions have turned a rich golden brown; about 20 minutes. Serve slightly warm or at room temperature garnished with thyme sprigs.

Tips:

  • To easily slice the onions, chill them for 30 minutes before slicing. This will help prevent them from falling apart.
  • If you don't have a food processor, you can grate the cheese by hand.
  • To make sure the tartlets are cooked through, insert a toothpick into the center. If it comes out clean, they are done.
  • Let the tartlets cool for a few minutes before serving. This will help them hold their shape.

Conclusion:

Onion cheese tartlets are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlugs. With a few simple ingredients, you can create a delicious and impressive dish that will be sure to please everyone.
