Time 35m

Yield 6 servings

Number Of Ingredients 10

1 teaspoon kosher salt, plus more for the pasta water
1/4 cup extra-virgin olive oil, plus more for drizzling
4 cloves garlic, thinly sliced
1 large bunch medium-thick asparagus (about 1 pound), peeled and cut into 1-inch pieces
1 pound orecchiette
One 10-ounce box frozen peas, thawed, or fresh shelled peas
1 bunch scallions, white and green parts, chopped (about 1 cup)
1/4 cup chopped fresh Italian parsley
1 cup grated Grana Padano cheese
Pea tendrils, for garnish

Steps:

  • Bring a large pot of salted water to boil for the pasta. Add the olive oil to a large skillet over medium heat. When the oil is hot, add the garlic and let it sizzle a minute. Add the asparagus and toss to coat in the oil. Cook and toss until the asparagus just begins to soften, about 5 minutes (add a splash of pasta water if the garlic is in danger of burning). Cover with a lid.
  • Uncover the asparagus, and at the same time add the orecchiette to the pasta water. Add the peas to the asparagus and season with the salt. Toss to combine and cook 2 to 3 minutes. Add the scallions, stir, and add 1 1/2 cups of pasta water. Bring to a boil and cook until reduced by about half, 3 to 4 minutes.
  • When the pasta is al dente, remove with a spider directly to the sauce. Add the parsley, drizzle with some olive oil, and toss to coat the pasta in the sauce, adding a little pasta water if it seems dry. Remove the skillet from the heat, sprinkle with the grated cheese, toss, garnish with pea tendrils and serve.

ORECCHIETTE WITH GRATED SQUASH, WALNUTS AND RICOTTA SALATA

Orecchiette With Grated Squash, Walnuts and Ricotta Salata image

I don't know why it had never occurred to me to grate hard winter squash until I started envisioning this pasta. If you have a food processor with a grater blade, this will be the easiest way you've ever prepared winter squash, short of sticking it in the oven skin and all. The cooked grated squash lodges in the indentations of the ear-shaped orecchiette, a perfect pairing.

Time 45m

Yield 6 servings

Number Of Ingredients 9

1 pound butternut squash (about half of a large squash)
2 tablespoons extra virgin olive oil
Salt to taste
2 garlic cloves, minced
2 ounces walnut pieces (about 1/2 cup), coarsely chopped
3 tablespoons chopped fresh marjoram, or 2 tablespoons chopped fresh sage
Lots of freshly ground pepper
1 pound orecchiette
2 ounces ricotta salata, grated (about 1/2 cup)

Steps:

  • Begin heating a large pot of water. When it comes to a boil, add a generous amount of salt and keep at a simmer.
  • Meanwhile, peel the squash (I use a vegetable peeler for this), cut it into chunks that will fit your food processor tube fitted with the grater blade, and grate. Alternately, grate with the large holes of a box grater.
  • Heat the olive oil over medium-high heat in a large, heavy skillet and add the grated squash and salt to taste. Cook, stirring often, for 8 to 10 minutes, until the squash has softened. Add the garlic, walnuts and half the marjoram or all of the sage and cook, stirring, for another minute. Turn the heat down to medium.
  • Add 1/2 cup of the water for the pasta and cook for another couple of minutes, until it has been absorbed and evaporated from the pan. Add another 1/2 cup water and continue to cook for another 3 minutes, or until the squash mixture is tender and moist. Taste, adjust salt, and add a generous amount of pepper. Keep warm while you cook the pasta.
  • Bring the pot of water back to a rolling boil and add the orecchiette. Cook al dente, usually 10 to 11 minutes. Add 1/2 cup of the cooking water to the squash mixture before draining, then drain the pasta and toss with the squash, along with the remaining marjoram and the ricotta salata. Serve hot.

ORECCHIETTE WITH FRESH AND DRIED BEANS AND TOMATOES

Orecchiette With Fresh and Dried Beans and Tomatoes image

Once the beans are done, this pasta dish takes only 15 minutes. Orecchiette is a great pasta to use with beans, which lodge in the hollows of the little ears. I used lush Good Mother Stallard beans, an heirloom bean that I ordered from Rancho Gordo for this dish, but you can substitute supermarket pinto or borlottis. Cook them simply and use some of the broth for the sauce. If you have marinara sauce on hand you can use that; otherwise take advantage of the tomatoes arriving in farmers' markets and your garden, and chop up a few of them. No need to cook them if you don't want to.

Categories     dinner, main course

Time 2h30m

Yield Serves 4

Number Of Ingredients 9

1/2 pound (about 1 1/2 cups) Good Mother Stallard Beans, pintos, or borlottis, rinsed and soaked for 4 hours or overnight in 1 quart water
1/2 large onion, or 1 small onion, cut in half or quartered
2 to 3 large garlic cloves, minced
Salt to taste
1 cup marinara sauce (using fresh or canned tomatoes), or 1 cup finely chopped fresh tomatoes
1/2 pound orecchiette
1/2 pound green beans, broken into 2- or 3-inch lengths
Slivered fresh basil leaves (about 2 tablespoons)
Freshly grated Parmesan for serving

Steps:

  • To cook dried beans, transfer with their soaking water to a heavy pot. Add more water as necessary to cover the beans with 1 1/2 to 2 inches of water. Over medium-high heat, bring to a gentle boil and skim away foam. Add onion and garlic, cover, reduce heat to low and simmer 30 minutes. Add salt to taste (I use at least a rounded teaspoon), cover and continue to simmer very gently for 1 to 1 1/2 hours, until the beans are tender all the way through and their texture is plush and velvety. Taste the bean broth and add more salt as necessary. Remove from heat. Let beans cool in the broth if not using right away.
  • Place a strainer over a bowl and drain beans. Measure out 1 cup of the broth and combine with the tomato sauce or tomatoes in a wide pan or a pasta bowl.
  • Bring a large pot of water to a boil, salt generously and add orecchiette. Boil 5 minutes and add green beans. Boil another 5 minutes, until pasta is cooked al dente. Drain and toss green beans and pasta with the cooked beans and tomato sauce or tomatoes. Add half the basil and toss again.
  • Serve in wide bowls, garnishing each serving with fresh basil and Parmesan.

Categories     Salad     Pasta     Side

Yield 6

Number Of Ingredients 10

1 pound orecchiette or other short pasta
1/2 cup olive oil
2 garlic cloves, crushed
12 ounces Swiss chard or mustard greens, stemmed
12 ounces baby spinach leaves
1 (15-ounce) can garbanzo beans, rinsed and drained
2 cups small cherry or grape tomatoes
8 ounces ricotta salata cheese, crumbled
2 teaspoons lemon zest
Kosher salt and freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain and reserve about 1 cup of the pasta water. In a large skillet over medium-high heat, heat the oil. Add the garlic and cook until fragrant and lightly browned, about 2 minutes. Using a slotted spoon, remove the garlic and discard. Add the Swiss chard and cook until wilted. In batches, add the spinach and cook until wilted. Add the beans and tomatoes and cook for 5 minutes. Turn off the heat. Add the pasta, 1/2 of the cheese, and lemon zest. Toss well and thin out the sauce with a little pasta water, if needed. Transfer to a large serving bowl and season with salt and pepper. Sprinkle with the remaining cheese and serve.

Tips:

  • Use fresh, seasonal greens for the best flavor. Look for greens with bright, crisp leaves and no signs of wilting.
  • If you can't find orecchiette pasta, you can use another small, pasta shape like ditalini or elbow macaroni.
  • Be sure to rinse the garbanzo beans well before using them. This will help to remove any excess starch and make them less likely to foam when cooking.
  • To make the ricotta salata, you can use store-bought ricotta cheese or make your own. If you're making your own, be sure to drain it well before using it.
  • Serve the orecchiette with greens, garbanzo beans, and ricotta salata immediately. The pasta is best when it's freshly cooked.

Conclusion:

This orecchiette with greens, garbanzo beans, and ricotta salata is a delicious and easy-to-make meal. It's perfect for a weeknight dinner or a casual lunch. The combination of flavors and textures in this dish is sure to please everyone at the table. So next time you're looking for a new pasta recipe to try, give this one a try.
