3 1/2 ounces parmesan cheese
2 2/3 tablespoons red wine vinegar
1 tablespoon lemon juice

1 1/2 cups olive oil
2 tablespoons chopped fresh parsley

Tips:

  • Use fresh ingredients for the best flavor. This means using fresh romaine lettuce, Parmesan cheese, and eggs.
  • Make sure the dressing is well-chilled before serving. This will help to give it a creamy, thick consistency.
  • If you don't have anchovy paste, you can substitute Worcestershire sauce. Start with a small amount and add more to taste.
  • To make a vegetarian version of the dressing, omit the anchovy paste and use vegetable broth instead of chicken broth.
  • You can store the dressing in the refrigerator for up to 2 weeks.
