Sauteed Steak with Mustard Cream Sauce image

Provided by Food Network

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 6

2 steaks, 1 to 1 1/2 pounds each
2 tablespoons canola oil
Salt and pepper
8 tablespoons Cognac
8 tablespoons heavy cream
4 tablespoons Dijon mustard

Turn the steaks with tongs or a fork inserted close to the rim of the fat, and saute 2 to 3 minutes. Immediately remove the steaks to a warm platter and season with salt and pepper. Cover loosely with foil while making the sauce. Discard any fat in the pan. Add the cognac and scrape up the coagulated juices. Add the cream and reduce by 1/2. Stir in the mustard and pour the sauce over the steak.

Tips:

  • To ensure your steak is cooked evenly, use a meat thermometer to check the internal temperature. For medium-rare, aim for 135°F (57°C), and for medium, aim for 145°F (63°C).
  • If you don't have a meat thermometer, you can also use the touch test to check the steak's doneness. For medium-rare, the steak should feel slightly пружинистым when you press it with your finger. For medium, it should feel slightly firmer.
  • To make sure your steak is juicy and flavorful, marinate it for at least 30 minutes before cooking. You can use a variety of marinades, but a simple mixture of olive oil, garlic, and herbs is always a good choice.
  • When searing the steak, be sure to use a hot pan and cook the steak for only a few minutes per side. This will help to create a nice crust on the outside while keeping the inside juicy.
  • After searing the steak, transfer it to a baking dish and finish cooking it in the oven. This will help to ensure that the steak is cooked evenly throughout.
  • To make the mustard sauce, simply whisk together Dijon mustard, sour cream, mayonnaise, and herbs. You can adjust the ingredients to taste.
  • Serve the steak with the mustard sauce and your favorite sides, such as roasted vegetables, mashed potatoes, or a salad.

Conclusion:

This oven-baked steak with mustard sauce is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The steak is cooked to perfection and the mustard sauce is creamy and flavorful. With a few simple tips, you can easily make this dish at home and impress your family and friends.
