- 1. Soak the fish in warm milk with salt if it has an odor (MILD fishy odor, not "throw it in the trash because it smells like walking death" odor) but try to buy nice fresh ones, right? It's a French technique I picked up awhile back. Drain the fish after.
- 2. Preheat the oven to 450F and line a baking sheet with nonstick foil. If you don't and the fish sticks to the pan, don't come griping to me. K?
- 3. Dip fish in milk then in coating, then in beaten egg then in the coating again.
- 4. Place fish on the pan, drizzle lightly with olive oil to help browning, bake for 10-15 minutes, then turn it over and bake for 5-10 minutes more or until it is browned nicely.
