1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1/4 cup panko breadcrumbs
1/2 cup parsley leaves, chopped
2 tablespoons unsalted butter, melted
1 1/2 pounds skin-on salmon fillet, preferably center-cut
1 tablespoon Dijon

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil. 8 salmon fillets (3 ounces each), skinned, preferably organic or wild
Fine sea salt and freshly ground white pepper

  • Preheat oven to 450 degrees.
  • Brush a rimmed baking sheet with butter. Brush salmon with butter and season with salt and pepper. Place salmon on prepared baking sheet, skin-side up.   • • Hold a sharp knife at a slight downward angle to the flesh and cut off the whitish, fatty portion of the belly. • Cut the salmon fillet into four pieces of equal size to help ensure that they cook at the same rate. • Make four or five shallow slashes along the skin side of each piece of fish, being careful not to cut into the flesh. 1. 4 tangerines
1 tablespoon tangerine juice, reserved from above
2 teaspoons lemon juice
1 1/2 teaspoons ginger, freshly grated
2 teaspoons extra virgin olive oil
1 scallion, sliced thin
salt and pepper, to taste
