Time 12h30m

Yield 9

Number Of Ingredients 11

2 cups quick-cooking oats
2 cups buttermilk
½ cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon salt
2 eggs, beaten
¼ cup butter, softened
⅓ cup raisins

Steps:

  • In a medium bowl, mix together the oats and buttermilk. Cover, and refrigerate overnight.
  • The next morning: In a large bowl, sift together the flour, sugar, baking powder, baking soda, cinnamon, and salt. Make a well in the center, and pour in the oatmeal mixture, eggs, butter, and raisins. Stir until just moistened. Allow batter to sit 20 minutes before cooking. If batter is too thick, add buttermilk 1 tablespoon at a time, until the batter reaches the desired consistency.
  • Heat a lightly greased, large skillet or griddle over medium heat. Pour 1/4 cup batter onto the hot griddle for each cake. Cook pancakes until bubbles appear on top, flip, and cook until lightly browned on bottom.

Tips:

  • Choose the Right Oats: Steel-cut oats or old-fashioned oats work best for this recipe. Avoid using instant or quick-cooking oats, as they will make the pancakes too mushy.
  • Soak the Oats Overnight: Soaking the oats overnight softens them and makes them easier to digest. It also helps to improve the flavor and texture of the pancakes.
  • Use a Non-Stick Pan: A non-stick pan is essential for making perfect oatmeal pancakes. A well-seasoned cast iron skillet can also be used.
  • Cook Over Medium Heat: Oatmeal pancakes should be cooked over medium heat. Cooking them over high heat will cause them to burn on the outside while remaining raw on the inside.
  • Flip the Pancakes Carefully: Oatmeal pancakes are delicate, so you need to be careful when flipping them. Use a wide spatula and gently slide it under the pancake before flipping.
  • Serve Warm: Oatmeal pancakes are best served warm. You can top them with your favorite toppings, such as maple syrup, honey, fruit, or yogurt.

Conclusion:

Overnight oatmeal pancakes are a delicious and healthy breakfast option that can be easily made ahead of time. With a few simple ingredients and a little planning, you can enjoy a warm and satisfying breakfast that will keep you full and energized all morning long. So next time you're looking for a quick and easy breakfast, give overnight oatmeal pancakes a try!
