Kosher salt
2 tablespoons coarsely ground mixed peppercorns
2 tablespoons sherry vinegar
2 teaspoons pure maple syrup
1/2 small shallot, minced
5 tablespoons vegetable oil

BEEF WITH SAUCE BEARNAISE

Beef with Sauce Bearnaise image

Provided by Nigella Lawson : Food Network

Categories     main-dish

Time 16m

Yield 2 to 4 servings

Number Of Ingredients 15

1 pound rump steak, about 1-inch thick
Olive oil
Salt
1 tablespoon minced shallots
2 tablespoons fresh tarragon leaves, chopped, and their stalks, chopped roughly and bruised
1 tablespoon chopped chervil, optional
2 tablespoons wine or tarragon vinegar
2 tablespoons white wine
1 teaspoon peppercorns (preferably white), crushed or bruised
3 egg yolks
1 tablespoon water
16 tablespoons (2 sticks) unsalted butter, soft, cut into 1/2-inch dice
Salt
Freshly milled white or black pepper
1/4 to 1/2 lemon, juiced

Steps:

  • For the steak, preheat a large saute pan over medium-high heat. Oil the rump steak and then place into the preheated pan. Cook for about 2 minutes on the first side, and then flip and finish cooking the second side, about 2 minutes more. This will yield a steak that is on the rare side; cook 1 to 2 minutes longer, per side, for a more well-done piece.
  • Let rest for 5 to 10 minutes.
  • For the Sauce Bearnaise, put the shallot, tarragon stalks, 1 tablespoon of the chopped tarragon and the chervil, if using, and the vinegar, wine, and peppercorns in a heavy-bottomed saucepan and boil until reduced to about 1 tablespoon. Don't move from the stove; this doesn't take long.
  • Press the reduced liquid through a regular or tea strainer and leave to cool. Put egg yolks and water in the top of a double boiler. Set over the bottom, in which water has come to a simmer. Add the reduced and strained liquid and whisk well. Keep whisking as you add the butter, cube by cube, until it is all absorbed. Taste, season as you wish with the salt and pepper, and add lemon juice as you wish. Stir in the remaining tablespoon of fresh chopped tarragon as you're about to serve with the steak.

STEAK WITH BEARNAISE SAUCE

Steak With Bearnaise Sauce image

We had this for dinner this past weekend and I cannot begin to describe how scrumptious it was. This is a recipe from Ina Garten / The Barefoot Contessa. I have never liked Bearnaise Sauce -- but I made this as a special treat for my husband. We BOTH absolutely loved this steak AND the sauce, and it will be a special dinner for us from now on. We served this with Rosemary Roasted Potatoes and Pesto Pea Salad. Yum! ** Please note: This has raw egg yolks in the Bearnaise Sauce **

BORDELAISE SAUCE WITH MUSHROOMS

Bordelaise Sauce with Mushrooms image

I used to visit the restaurant of a friend who was a chef. He made the best mushroom sauce for beef, but would not share his recipe. After trial and error, I think mine comes very close to his. This haute cuisine sauce makes everyday steaks or roasts into something a little more elegant. Serve atop grilled steaks, hamburger steaks, roasted beef or venison. Bon Appetite!

Time 1h10m

Yield 4

Number Of Ingredients 13

1 tablespoon butter
2 tablespoons shallot, minced
1 teaspoon minced garlic
3 tablespoons butter
2 cups sliced fresh mushrooms
1 cup beef broth
⅓ cup red wine
1 tablespoon Worcestershire sauce
1 bay leaf
¼ teaspoon chopped fresh thyme, or to taste
salt and pepper to taste

  • To ensure even cooking, bring the steaks to room temperature before cooking.
  • Preheat your grill or pan over high heat before cooking the steaks.
  • Sear the steaks for a few minutes per side, or until they are browned and slightly charred.
  • Reduce the heat to medium and cook the steaks for an additional 5-7 minutes per side, or until they reach your desired doneness.

  • For the panko-almond crust, use a food processor to grind the almonds and panko breadcrumbs together until they are fine. Season the mixture with salt, pepper, and garlic powder.
  • To make the béarnaise sauce, whisk together the egg yolks, white wine vinegar, shallots, and tarragon in a heatproof bowl set over a saucepan of simmering water. Gradually whisk in the melted butter until the sauce is thick and creamy.
  • To make the mushroom sauce, sauté the mushrooms, shallots, and garlic in butter until the mushrooms are tender. Add the white wine and cook until it has reduced by half. Stir in the cream and simmer for 5 minutes, or until the sauce has thickened.
