PARMESAN-ROMANO MASHED POTATOES

Parmesan-Romano Mashed Potatoes image

My sister hates mashed potatoes, but for whatever reason likes my potatoes. She one night requested cheesey mashed potatoes, and this recipe was born out of what I had on hand, parmesan and romano! I added a whole lot more than cheese, and now she won't eat plain mashed potatoes!! Boiling the potatoes with the herbs allows the flavors to cook into the potato and blend together into a nice soft herb-y taste without being over powering. You don't have to use the herbs I do, just use what you have in the cupboard that you like! :-)

BAKED MASHED POTATOES WITH PARMESAN

Baked Mashed Potatoes With Parmesan image

The combination here of baked and mashed potatoes can be made in advance and reheated at serving time. A food mill or old-fashioned food ricer yields the best texture, but you can also mash the potatoes in any way you are accustomed. I like to use Idaho potatoes because they are less moist than many other types.

Tips:

  • Choose the right potatoes: Yukon Gold or Russet potatoes are best for mashed potatoes because they have a high starch content, which makes them creamy and smooth.
  • Boil the potatoes until they are very tender: This will ensure that they are easy to mash and will result in a smooth and lump-free puree.
  • Drain the potatoes thoroughly: This will prevent the mashed potatoes from being watery.
  • Mash the potatoes with a potato ricer or a food mill: This will give you the smoothest and creamiest mashed potatoes.
  • Add the milk and butter gradually: This will help you control the consistency of the mashed potatoes. You want them to be creamy and smooth, but not too runny.
  • Season the mashed potatoes with salt, pepper, and garlic powder to taste: You can also add other herbs and spices, such as chives, parsley, or rosemary.
  • Serve the mashed potatoes immediately: They are best when they are hot and fluffy.

Conclusion:

Parmesan Romano mashed potatoes are a delicious and easy-to-make side dish that is perfect for any occasion. They are creamy, cheesy, and flavorful, and they are sure to be a hit with your family and friends. So next time you are looking for a new way to serve mashed potatoes, give this recipe a try.
