From Betty's Soul Food Collection... Hamburger Helper jumpstarts casserole-making. A touch of this and that make this one a winner.

1 pound lean ground beef
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/2 teaspoon seasoned salt
2 3/4 cups hot water
1 3/4 cups milk
1 package Betty Crocker™ Hamburger Helper™ beef pasta
2 tablespoons packed brown sugar
1/4 cup ketchup
1 1/2 cups Original Bisquick™ mix
2 eggs

Steps:

  • Heat oven to 375°F. In 10-inch skillet, cook beef, onion, bell pepper and seasoned salt over medium heat, stirring occasionally, until beef is brown; drain.
  • Stir hot water, 3/4 cup of the milk and the Sauce Mix into beef mixture. Stir in brown sugar and ketchup. Heat to boiling, stirring occasionally. Spoon beef mixture into ungreased rectangular baking dish, 13x9x2 inches; stir in uncooked pasta. Set aside.
  • In medium bowl, stir Bisquick mix, remaining 1 cup of the milk and the eggs until blended. Pour evenly over beef mixture.
  • Bake cobbler 30 to 35 minutes or until light golden.

Italian Deli Pasta Salad image

This pasta salad has all my favorite things from the Italian deli - a trio of meats, a mix of cheeses, and giardiniera. I like to switch it up and use other meats like prosciutto, hot calabrese, or mortadella. Giardiniera comes in mild and hot varieties; use whichever you prefer. A good-quality Italian dressing makes a difference too!

1 (16 ounce) package rotini or fusili pasta
2 cups cherry tomatoes, halved
8 ounces provolone cheese, cubed
4 ounces Genoa salami, chopped
4 ounces sliced pepperoni, cut into bite-sized pieces
4 ounces hot capacola sausage, roughly chopped
1 medium red onion, minced
1 (8 ounce) can black olives, drained
½ cup giardiniera
¼ cup grated Parmesan cheese
1 (16 ounce) bottle Italian salad dressing, or as needed

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, 8 to 10 minutes. Drain and rinse with cold water.
  • Combine pasta, tomatoes, provolone cheese, salami, pepperoni, capicola, onion, olives, giardiniera, Parmesan cheese, and 1/2 of the Italian dressing in a large bowl. Stir to combine and refrigerate for at least 1 hour.
  • Before serving, add some or all of the remaining dressing.

1-1/2 pounds ground beef
1 envelope taco seasoning
1 jar (16 ounces) salsa
1 can (8-3/4 ounces) whole kernel corn, drained
2 cups shredded sharp cheddar cheese
1-1/2 cups biscuit/baking mix
1/2 cup 2% milk
1/8 teaspoon freshly ground pepper

Steps:

  • In a large skillet, cook beef over medium heat for 8-10 minutes or until no longer pink, breaking into crumbles; drain. Stir in taco seasoning, salsa and corn; heat through. Transfer to an 11x7-in. baking dish; sprinkle with cheese., In a small bowl, mix biscuit mix and milk just until blended; drop by tablespoonfuls over cheese. Sprinkle with pepper., Bake, uncovered, at 350° for 35-45 minutes or until bubbly and topping is golden brown.
