Provided by Alton Brown

Time 45m

Yield 4 servings

Number Of Ingredients 10

4 (6-ounce) pattypan squash
2 tablespoons olive oil, divided
1 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
1 large shallot, diced
1 clove garlic, minced
1/2 cup fresh corn kernels, about 1 ear
1/2 cup cooked lima beans
2 ounces toasted pecans, chopped
1 tablespoon chopped fresh thyme leaves

Steps:

  • Heat the oven to 400 degrees F. Put a half sheet pan in the oven to heat for 15 minutes.
  • Trim the woody ends and halve the squash crosswise. Scoop out the squash seeds, leaving a 1/2-inch shell. Reserve the flesh. Brush the cut sides of the squash with 1 tablespoon of the olive oil, and season with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Arrange the squash, cut side down, onto the preheated pan and roast until the squash is tender and the flesh side is browned, about 15 minutes. Transfer the squash to a serving platter and set aside.
  • Meanwhile, finely chop the reserved squash flesh. Heat a 10-inch cast iron skillet over medium heat and add the remaining tablespoon of olive oil. When the oil shimmers add the chopped squash, shallot, garlic, remaining 1/2 teaspoon salt, and 1/4 teaspoon of pepper. Cook, stirring occasionally, until tender and browned, about 2 to 3 minutes. Add the corn, limas, pecans, and thyme. Cook until heated through, approximately 1 minute. Divide the stuffing evenly among the cooked squash and serve immediately.

Pattypan is very mild-flavored, so my husband will eat it. And it's abundant, too, so we're always looking for ways to serve it. Served with fresh corn and sliced tomatoes, this is a meatless meal. Try a horseradish sauce for the fritters.

Provided by Chris Rosa

Categories     Breakfast

Time 55m

Yield 4 servings

Number Of Ingredients 18

⅓ cup warm water
⅓ cup dried cranberries
1 can butternut squash purée
1 cup buttermilk
2 large eggs
1 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
2 tablespoons dark brown sugar
1 ½ cups all purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
1 teaspoon kosher salt
½ teaspoon cinnamon
⅓ cup semi-sweet chocolate chips
8 tablespoons unsalted butter, for cooking pancakes
½ cup pecan, roughly chopped
½ cup maple syrup
½ stick unsalted butter

Steps:

  • Add the warm water and dried cranberries to a small bowl. Set aside to soak for 10-15 minutes while you prepare the pancake batter, then drain well.
  • In a medium bowl, combine the butternut squash purée and buttermilk. Blend with an immersion blender until smooth. Add the eggs, vanilla, melted butter, and brown sugar and blend to combine.
  • In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  • Add the wet ingredients to the dry ingredients and fold with a rubber spatula until just combined. Gently fold in the drained cranberries and chocolate chips.
  • Let the batter rest for 15-30 minutes at room temperature.
  • Meanwhile, make the toasted pecan maple syrup: Toast the pecans in a small saucepan over medium heat until fragrant and beginning to brown, 3-4 minutes. Add the maple syrup and butter and cook until the bubbling diminishes slightly, stirring throughout to keep from burning, 3-4 minutes. Remove the pot from the heat and keep warm until ready to serve.
  • Melt 1 tablespoon of butter in a medium skillet over medium-low heat. Once the butter begins to foam, add ⅓ cup (40 G)of pancake batter to the pan. Cook for 2-3 minutes, until bubbles start to appear on the surface. Flip the pancake and cook for another 2-3 minutes on the other side, until golden brown and cooked through. Transfer the pancake to a platter and repeat with the remaining batter, adding more butter as needed. As you cook the pancakes, keep them in the oven at 200°F (95°C) or cover with foil to keep warm.
  • Serve the pancakes warm with the toasted pecan maple syrup on top.
  • Enjoy!

Tips:

  • Choose the right pattypan squash: Look for small, young pattypan squashes that are about 2 to 3 inches in diameter. They should be firm and have a deep green color.
  • Prepare the pattypan squash properly: Wash the pattypan squashes thoroughly and pat them dry. Remove the stem and seeds, then grate the squash using a box grater or food processor.
  • Use a good quality pancake mix: For best results, use a pancake mix that is made with whole wheat flour or oat flour. This will give the pancakes a more nutritious and flavorful taste.
  • Don't overmix the batter: Overmixing the batter will make the pancakes tough. Mix the ingredients just until they are combined.
  • Cook the pancakes over medium heat: This will help to prevent them from burning. Cook the pancakes for 2-3 minutes per side, or until they are golden brown.
  • Serve the pancakes immediately: Pattypan squash pancakes are best served hot off the griddle. Serve them with your favorite toppings, such as butter, syrup, or fruit.
