I got this recipe from Paula Deen's magazine and recently got the chance to try it. It is delicious; you can't go wrong with Paula IMO. This can be assembled and frozen ahead. When you are ready to serve, allow to thaw in the refrigerator and then cook as directed. I omit the refried beans for personal preference.

Time 1h10m

Yield 8 serving(s)

Number Of Ingredients 13

2 lbs ground chuck
1 medium onion, chopped
2 garlic cloves, minced
2 tablespoons Worcestershire sauce
2 cups sliced fresh mushrooms
1 (14 1/2 ounce) can beef broth
1 (10 3/4 ounce) can cream of mushroom soup
1 (16 ounce) container sour cream
3/4 teaspoon salt
1 teaspoon pepper
8 ounces wide egg noodles, cooked and kept warm
2 tablespoons butter
1 (3 ounce) can French fried onion rings

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 13x9x2-inch baking dish.
  • In a large skillet, cook ground chuck, onion, and garlic over medium heat until meat is browned and crumbles. Drain.
  • Return meat to skillet and stir in Worcestershire, mushrooms, and beef broth. Bring to a boil, reduce heat, and simmer for 15 minutes.
  • Stir in soup, sour cream, salt and pepper. Remove from heat.
  • Combine hot cooked noodles and butter, stirring until butter melts.
  • Combine noodles and meat sauce. Spoon into prepared baking dish. Bake for 30 minutes.
  • Top evenly with fried onions and bake for 10 more minutes.

Tips:

  • Use a variety of cheeses. Paula Deen's recipe calls for a combination of cheddar, Monterey Jack, and mozzarella cheeses. You can use any type of cheese that you like, but a good melting cheese is essential. Some other good options include Pepper Jack, Colby, or queso Oaxaca.
  • Don't overcook the beef. The beef should be cooked just until it is no longer pink in the center. Overcooked beef will be tough and chewy.
  • Let the casserole rest before serving. This will allow the flavors to meld and the casserole to set. Let it rest for at least 15 minutes before serving.
  • Serve with your favorite toppings. Some popular toppings for beef enchilada casserole include sour cream, guacamole, Pico de Gallo, and shredded lettuce.

Conclusion:

Paula Deen's Baked Beef Enchilada Casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great dish to serve to a crowd. With its combination of flavorful beef, melted cheese, and crispy tortillas, this casserole is sure to be a hit.
