Time 40m

Yield 6 serving(s)

Number Of Ingredients 11

2 cups mashed potatoes
1/2 cup sour cream
1 small onion, sliced thin
1 small bell pepper, sliced thin
8 tablespoons butter
1 1/2 cups grated cheddar cheese
4 medium potatoes, cooked
6 slices bacon, cooked crisp
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

  • Preheat oven to 350 degrees F.
  • Spread mashed potatoes evenly on bottom of casserole dish.
  • Layer sour cream evenly over top.
  • Sprinkle House Seasoning, to taste.
  • Saute onion and bell pepper in butter; evenly layer over top of sour cream.
  • Slice potatoes and layer over onions and bell peppers.
  • Add butter.
  • Sprinkle House seasoning.
  • Finally top with cheese.
  • Bake for 25 to 30 minutes.
  • Remove from oven and crumble bacon over top.
  • Cook's Note: Leftover mashed potatoes work wonderfully in this recipe.
  • House Seasoning:
  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder
  • Mix ingredients together and store in an airtight container for up to 6 months.

Tips:

  • Choose the Right Potatoes: For the best mashed baked potato casserole, select starchy potatoes like Russet or Yukon Gold. These potatoes will break down easily, creating a smooth and creamy texture.
  • Don't Overcook the Potatoes: Overcooked potatoes will become gluey and lose their flavor. Cook them until they are tender but still hold their shape.
  • Season Generously: Don't be shy with the seasonings. Salt, pepper, and garlic powder are all essential for a flavorful casserole. You can also add other herbs and spices to your liking.
  • Use High-Quality Cheese: The cheese is a key ingredient in this dish, so use the best quality cheese you can find. Sharp cheddar or a blend of cheddar and mozzarella work well.
  • Don't Overmix: Once you've added the cheese, stir the mixture just until combined. Overmixing will make the casserole tough.
  • Bake Until Golden Brown: Bake the casserole until the top is golden brown and bubbly. This will ensure that the casserole is cooked through and has a crispy crust.

Conclusion:

Paula Deen's mashed baked potato casserole is a classic comfort food that is perfect for any occasion. With its creamy texture, cheesy flavor, and crispy crust, this dish is sure to be a hit. So next time you're looking for a side dish that will impress your family and friends, give this recipe a try. You won't be disappointed!
