1 cup rolled oats
½ cup slivered almonds
½ cup brown sugar
⅓ cup melted unsalted butter
1 (.25 ounce) package unflavored gelatin (such as Knox®)
¾ cup orange juice
2 tablespoons orange juice
1 pint vanilla ice cream
2 cups diced fresh peaches
¼ teaspoon almond extract

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spread oats on a cookie sheet.
  • Toast in the preheated oven for 5 minutes. Add almonds to the oats and continue to toast for 5 minutes more. Remove from the oven and transfer to a bowl.
  • Stir brown sugar and melted butter into the oat mixture. Press mixture onto the bottom and sides of a 9-inch pie pan. Chill while preparing filling.
  • Bring orange juice to a boil in a saucepan. Remove from heat. Sprinkle in gelatin slowly while stirring with a whisk until fully dissolved. 3-1/2 cups sliced peeled peaches or frozen unsweetened sliced peaches
1/2 cup sugar
1 package (3 ounces) lemon gelatin
1/2 cup cold water
2 cups vanilla ice cream, softened
1 deep-dish pastry shell (9 inches), baked
1 cup heavy whipping cream, whipped

Steps:

  • Place peaches in a bowl; sprinkle with sugar. Let stand for 15 minutes. Drain, reserving juice in a 1-cup measuring cup. Set peaches aside., Add enough water to the juice to measure 1 cup; pour into a small saucepan. Bring to a boil. Remove from the heat. , Stir in gelatin until dissolved; add cold water. Gradually add the ice cream, 1/2 cup at a time, stirring after each addition until blended. Cover and refrigerate for 60-75 minutes or until slightly thickened, stirring occasionally (mixture may separate)., Drain peaches again; discard juice. Fold gelatin mixture into peaches. Transfer to pastry shell. Cover and refrigerate for 3 hours or until firm. Just before serving, garnish with whipped cream.

3 1/2 c. sliced peaches (large can)
1 pkg. lemon or peach jello (small)
1/2 c. cold water
1 pt vanilla ice cream
1 9" BAKED pie crust or graham cracker crust
1/2 c. heavy cream -- whipped

Steps:

  • Drain peaches, reserve liquid Add water to syrup to make 1 cup, heat to boiling; remove from heat. Add Jello; stir until dissolved. Add cold water. Cut ice cream into 6 pieces, add to hot liquid, stir until melted. Chill until mixture mounds slightly when dropped from spoon (15-20 minutes) Fold in peaches and pour into COOLED pastry shell. Chill until firm, several hours. Serve with whipped cream.

8 graham crackers, crushed
1/2 teaspoon allspice

1 package sugar-free peaches melba gelatin
1 (16-ounce) can juice-packed sliced peach, drained, reserve juice
1 package ESTEE whipped topping mix

  • TO PREPARE CRUST:Heat oven to 400°F. In 9-inch pie pan, combine cookie and cracker crumbs with allspice. Stir in margarine and yogurt. Pat into bottom and up sides of pie pan. Bake 8 to 10 minutes or until browned remove and cool on rack.TO PREPARE FILLING:Meanwhile, combine gelatin mix with 1 cup boiling water, stirring until dissolved. Chill pie about 1 1/2 hours until firm, or freeze several hours if desired.
