1-2/3 cups all-purpose flour
1/2 cup packed brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup whole milk
1/3 cup canola oil
1 egg
1 teaspoon vanilla extract
1 cup chopped fresh or frozen peaches, thawed and drained
1/2 cup chopped pecans
TOPPING:
1/4 cup packed brown sugar
1/4 cup chopped pecans
1 tablespoon cold butter

Steps:

  • In a large bowl, combine the flour, brown sugar, baking powder and salt. In another bowl, combine the milk, oil, egg and vanilla. Stir into dry ingredients just until moistened. 1 tablespoon firm butter or margarine
1/2 cup packed brown sugar
1/2 cup milk
1/3 cup vegetable oil
1 teaspoon vanilla
1 egg
1 2/3 cups Gold Medal™ all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup chopped fresh peach
1/2 cup coarsely chopped pecans

Steps:

  • Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups or line with paper baking cups. In small bowl, mix 1/4 cup brown sugar and 1/4 cup pecans. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly. Set aside.
