2/3 cup peanut butter
8 tablespoons (1 stick) unsalted butter
1/3 cup malted milk powder
8 cups crisp rice cereal, such as Rice Chex
2 cups confectioners' sugar
2 cups freeze-dried bananas or banana chips
1 cup butterscotch chips

Steps:

  • Combine the chocolate chips, peanut butter, butter and malted milk in a medium microwave-safe bowl. Microwave for 30-second increments, stirring, until smooth. Put the cereal in a large bowl, add the melted chocolate mixture and stir until evenly coated. Allow the cereal to cool slightly, and then transfer to a large brown paper bag or re-sealable plastic bag. Add the confectioners' sugar, bananas and butterscotch chips. 1 tablespoon peanut butter
2 teaspoons nutella or 2 teaspoons other chocolate hazelnut spread
1 teaspoon flax seed (can be omitted)

  • Slice banana into little disks, about 1-1.5 cm thick.
  • Mix the remaining ingredients, and dab the mixture onto half of the banana slices.
  • Top each banana slice with a peanut butter mixture one, squishing together like a sandwich.

I just came up with this recipe while trying to figure out what to do with some wheat germ I had. I must say, it's pretty tasty (although I love peanut butter on just about anything!!). This would be a good, healthy snack for kids. Wheat germ is a good source of Vitamin E and Folic Acid. * edit - I've just tried it using Grape Nuts cereal instead of the wheat germ and it is really good as well, so I am listing it as an optional ingredient. Of course the Grape Nuts are a whole lot crunchier than the wheat germ.
