EASY HEDGEHOG CANAPé SKEWERS



Easy hedgehog canapé skewers image

Make these crowd-pleasing hedgehog canapé skewers for a party. With tomato and mozzarella, cheese and pineapple, and prawn and cucumber options, they're perfect for a family gathering

Number Of Ingredients 15

1 grapefruit or 1/2 large cucumber, for the hedgehog (optional)
12 mozzarella pearls
1 tsp pesto
2-3 tbsp olive oil
12 small cherry tomatoes
12 basil leaves
2 pineapple rings, each cut into 6
50g medium cheddar , cut into 12 small cubes
50g red leicester , cut into 12 small cubes
12 cooked and shelled prawns
½ lemon , juiced
½ cucumber , cut into 2 even chunks and shaved into ribbons
1 tsp sesame oil
1 tsp sesame seeds
36 bamboo (or reusable) short skewers or long toothpicks

Steps:

  • To make a hedgehog to push the skewers into, use a grapefruit with the base trimmed flat, or use a cucumber to make a longer holder.
  • For mozzarella & tomato skewers, tip the mozzarella into a bowl, mix the pesto with the olive oil and pour it over the cheese. Wrap a basil leaf around each mozzarella pearl and thread onto the skewers alternating with the tomatoes.
  • For the cheese & pineapple skewers, sandwich a piece of pineapple between a piece of cheddar and a piece of red leicester on a skewer. If you want to be very neat, trim the pineapple to match the cheese (eat the offcuts).
  • To make prawn skewers, put the prawns in a bowl and squeeze over the lemon, and season with pepper, but not salt. Tip the cucumber into a bowl, add the sesame oil and seeds and toss together. Fold a cucumber ribbon and push it onto a skewer, followed by a prawn and another cucumber ribbon.
  • Push all the skewers into your hedgehog or arrange them on a platter, keeping each type separate.

4 pears, peeled
½ lemon, juiced
2 cups water
½ cup white sugar
¼ teaspoon vanilla extract
4 (1 ounce) squares bittersweet chocolate, chopped
2 tablespoons heavy cream
1 tablespoon butter
1 tablespoon coffee flavored liqueur
4 maraschino cherries, garnish

Steps:

  • Leave stems on peeled pears. Sprinkle with lemon juice to prevent browning. Set aside.
  • In a saucepan large enough to accommodate 4 pears standing upright, combine water and sugar. Place over medium heat, and boil until sugar is dissolved. Stir in vanilla, then place the pears in. Reduce heat, cover, and simmer for 15 minutes. Allow to cool in liquid, then drain.
  • In the top of a double boiler, combine chocolate, cream and butter. Heat, stirring, until chocolate is melted and smooth. Remove from heat, and stir in coffee liqueur.
  • Place pears on serving dish, pour chocolate sauce over pears, and garnish with maraschino cherries.

½ (15 ounce) can pear halves, drained
12 raisins

Steps:

  • Stick slivered almonds all over pear halves so they resemble spikes, leaving the pointy side of the pear empty for the face. Stick 2 raisins in the face part for eyes and one on the front for the nose.

My version of a recipe found on a free supermarket recipe card! It's chocolaty, juicy, and scrumptious. The tart is best served warm with creme fraiche.

1 shortcrust pastry crust
6 ½ ounces 70% dark chocolate, chopped
1 ½ cups ground almonds
2 eggs
½ cup superfine sugar
6 ½ tablespoons butter, softened
3 pears - peeled, cored, and quartered

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Roll pastry out to 1/4 inch thickness and use it to line a 9-inch tart dish. Prick the pastry with a fork and then place into the freezer for 20 minutes to prevent pastry from rising during baking.
  • Bake in the preheated oven for 10 minutes. Set crust aside. Reduce oven temperature to 325 degrees F (165 degrees C).
  • Heat a saucepan about 1/3-full of water to a low simmer, about 5 minutes, then reduce heat to lowest setting. Place a heat-proof bowl over the pan in such a way that it does not touch the water. Add chocolate to the bowl and allow to melt. Limit stirring to an absolute minimum to prevent chocolate from separating.
  • Mix ground almonds, eggs, sugar, and butter together in a bowl. Add warm melted chocolate and stir to combine. Pour chocolate mixture into the baked pastry crust.
  • Arrange pears on top of the tart by pressing them into the chocolate mixture.
  • Bake in the hot oven until pastry is golden and mixture is firm, 35 to 45 minutes.
