PECAN BAR COOKIES

When you're baking for a party, making these pecan bars that guests can hold in their hands is a great idea.

Time 1h10m

Yield Makes 24

Number Of Ingredients 10

1 cup (2 sticks) unsalted butter, room temperature
1/2 cup confectioners' sugar
2 teaspoons salt
2 cups plus 2 tablespoons all-purpose flour (spooned and leveled)
1/2 teaspoon baking powder
2 large eggs
1 1/2 cups packed light-brown sugar
1 tablespoon dark corn syrup
2 cups pecans, coarsely chopped
1 cup sweetened flaked coconut

Steps:

  • Preheat the oven to 375 degrees. Using an electric mixer, beat butter, confectioners' sugar, and 1 teaspoon salt until light. Beat in 2 cups flour until it forms a mass. Transfer to a 9-by-13-inch pan. Place a sheet of plastic wrap on the dough and use it to press the dough into the pan (this will make it easier and will prevent the dough from sticking to your fingers). Bake 20 to 25 minutes or until edges are golden.
  • Meanwhile, whisk together remaining 2 tablespoons flour, remaining teaspoon salt, and baking powder. Using an electric mixer, beat eggs, brown sugar, and corn syrup until light. Fold flour mixture into egg mixture, then pecans and coconut.
  • Pour over crust and bake 20 to 25 minutes until set. Run a metal spatula around the edges while still warm, then transfer to a wire rack and cool in pan before cutting into 24 bars.

Tips:

  • Use high-quality ingredients. The better the ingredients, the better the cookies will taste.
  • Make sure the butter and cream cheese are softened to room temperature before creaming them together. This will help them mix together smoothly and create a creamy filling.
  • Do not overmix the dough. Overmixing will make the cookies tough.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies until they are just set. Overbaking will make them dry and crumbly.
  • Let the cookies cool completely before frosting them. This will help the frosting set properly.

Conclusion:

Pecan bar cookies are a delicious and easy-to-make treat that is perfect for any occasion. With their buttery crust, creamy filling, and crunchy pecans, these cookies are sure to be a hit with everyone who tries them. So next time you are looking for a sweet treat to make, give pecan bar cookies a try. You won't be disappointed!
