1/2 cup butter, cut into pieces

3 large eggs, room temperature

FUDGE FROSTING:
1-1/2 ounces unsweetened chocolate
2/3 cup sweetened condensed milk
1/4 cup butter
1 large egg yolk, beaten

1/3 cup cocoa, plus
1 tablespoon cocoa
2 1/4 cups sugar
4 eggs

3/4 cup pecan pieces
2 unbaked pie shells

Steps:

  • Melt butter and blend in cocoa.
  • Mix cocoa mixture with sugar.

1 cup packed dark-brown sugar
1/4 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup pecans, coarsely chopped

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch-square baking pan. Line bottom with parchment paper, leaving an overhang on two sides. Butter paper; set pan aside. In a medium bowl, whisk together flour, baking powder, and salt; set aside.

1/2 ounce praline liqueur
1 cup pecans, chopped
1/4 lb butter
1 1/2 cups sugar
5 ounces evaporated milk
1 (12 ounce) package semisweet chocolate morsels
1 tablespoon vanilla
1 (7 ounce) jar marshmallow creme

Steps:

  • Line a 9-inch Pyrex dish in aluminum foil and set aside.
  • In a two quart heavy bottom pot, melt butter over medium-high heat.
  • Add sugar and evaporated milk and blend well into butter.
  • Bring to a rolling boil, reduce heat to simmer and cook approximately five minutes stirring constantly.
  • Be careful not to scorch butter as mixture will caramelize.
  • Remove from heat and using a large cooking spoon, stir in morsels, vanilla, marshmallow creme, praline liqueur and pecans, whipping constantly.
  • Stir until mixture becomes creamy and slightly thickened.
  • Pour into the Pyrex pan and allow to cool.
  • Cut fudge into 1-inch squares and serve.

1 cup light corn syrup
3/4 cup sugar
3 ounces unsweetened chocolate, chopped
3 tablespoons butter
3 large eggs

Steps:

  • Preheat oven to 350°F. Stir corn syrup and sugar in heavy medium saucepan over medium heat until sugar dissolves and mixture boils. Remove from heat. Add chocolate and butter and stir until melted and mixture is smooth. Cool slightly. Whisk in eggs, vanilla and salt. Stir in pecans. Pour filling into crust. Bake until filling is set, about 40 minutes. Cool slightly. Serve warm or at room temperature.

1 cup raw pecans, chopped

Steps:

  • Spray 8-inch square pan with cooking spray.
  • In 2-quart saucepan, heat chocolates, condensed milk and cream over low heat until melted and smooth. Remove from heat; stir in bourbon, vanilla, salt and pecans. Mixture will be thick, but stir slowly until combined.
  • Spread mixture in pan. Sprinkle with flaky sea salt. Refrigerate 30 to 45 minutes or until set.

2 cups sugar
1 cup buttermilk
1/2 cup (1 stick) unsalted butter, cut into pieces
1 tablespoon honey
1/8 teaspoon kosher salt
Flaky sea salt (such as Maldon)

A candy thermometer

Steps:

  • Preheat oven to 350°F. Line a 9x5" loaf pan with parchment paper, leaving a generous overhang on long sides; set aside.
  • Toast pecans on a rimmed baking sheet, tossing occasionally, until fragrant and slightly darkened in color, 8-10 minutes. Let cool, then coarsely chop.
  • Heat sugar, buttermilk, butter, honey, and kosher salt in a medium saucepan over medium-high heat, stirring occasionally, until butter and sugar are melted, about 3 minutes.   • Immediately pour mixture into a medium bowl and, using an electric mixer on medium-high speed, beat until cool and thickened (it will be stiff and matte), 5-8 minutes. Fold in pecans. Scrape fudge into prepared pan; smooth top and sprinkle with sea salt. Let sit at least 1 hour before cutting into pieces.
  • DO AHEAD: Fudge can be made 1 week ahead. Store tightly wrapped at room temperature.
