3 large eggs, lightly beaten
3 cups crushed cornflakes

Steps:

  • Cut cheese into 2-3/4x1/2-in. sticks. Place the flour, eggs and cornflakes in three separate shallow bowls. Coat cheese sticks with flour; dip in egg, then roll in cornflakes until well coated. Let stand for 5 minutes., In an electric skillet or deep-fat fryer, heat oil to 375°. Cook cheese sticks in batches for 30 seconds or until golden brown. Drain on paper towels. 2 cups vegetable oil, for frying
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 eggs, beaten
2 cups crushed pretzels
Salsa, for serving, optional

Steps:

  • Freeze the cheese sticks for at least 30 minutes.
  • Heat the oil to 350 degrees F in a deep, heavy pot.
  • Set up a breading station with the flour and a pinch of salt and pepper in one pie pan; the beaten eggs in a second; and the pretzel crumbs in a third.
  • Dip each cheese stick in the flour, then in the egg wash, and then in the pretzels.
  • Carefully add the breaded cheese sticks to the hot oil and fry until dark golden brown all over, about 1 minute per side. Drain on a paper-towel-lined plate and immediately sprinkle with salt. Serve with salsa.

15 ounces pepper jack cheese, shredded cold, then left unrefrigerated until room temperature
1/2 cup (1 stick) unsalted butter, softened
2 cups all-purpose flour
1 heaping teaspoon kosher salt
1/2 tablespoon garlic powder
1/2 teaspoon freshly ground black pepper
Pinch cayenne pepper
1 tablespoon finely chopped fresh thyme
Nonstick cooking spray, for the cookie sheets

Steps:

  • Preheat the oven to 325 degrees F.
  • Put the softened cheese and butter in the bowl of a stand mixer. Using the paddle attachment, beat until the mixture has the consistency of whipped cream, 15 to 30 minutes.
  • Sift 1 cup of the flour together with the salt, garlic powder, black pepper and cayenne in a large bowl. Stir in the thyme. Gradually add the seasoned flour to the cheese mixture by large spoonfuls, beating well after each addition. Add the remaining 1 cup unseasoned flour incrementally until the dough is somewhat stiff but still soft enough to be pushed through a cookie press (you may not need to add all the flour).
  • Lightly spray 2 cookie sheets with cooking spray. Put a portion of the dough into a cookie press fitted with the star tip and press the dough onto the cookie sheets in long strips that run the length of the pans (see Cook's Note). Repeat with the remaining dough until the cookie sheets are full. Bake, flipping halfway through, until the straws are golden brown and crisp, about 20 minutes.
  • With your hands or a sharp knife, break or cut the strips into 3-inch lengths. Use a flat, thin spatula or egg turner to remove the cheese straws from the pan. Allow them to cool on a wire rack. Once they are completely cool, serve or store in a tightly covered container.

1 cup cooked, cooled rice
1 teaspoon coarse salt
1 bag mini bell peppers
2 tablespoons chopped fresh mint
1 teaspoon minced garlic
1 teaspoon dried oregano
1 cup crumbled feta cheese
2 tablespoons chopped fresh flat-leaf parsley
1 teaspoon minced garlic
1 tablespoon finely grated lemon zest
1/2 teaspoon crushed red-pepper flakes (optional)
1/2 cup finely grated Parmesan cheese
2 tablespoons chopped fresh cilantro leaves
1 teaspoon minced garlic
1 tablespoon minced lemongrass
1 tablespoon minced fresh ginger
1 tablespoon minced shallots

1/2 pound pepper Jack cheese, grated coarse
1 large egg, separated
1 teaspoon salt, or to taste
3/4 teaspoon cayenne, or to taste
1 cup all-purpose flour

  • Preheat oven to 375°F. and grease two baking sheets.
  • In a food processor blend together butter and cheese until smooth. Add egg yolk, salt, and cayenne and blend until combined. Add flour and blend until mixture just forms a dough.
  • Working in batches, transfer dough to a pastry bag fitted with a 7/8-inch-wide ribbon tip and pipe dough in long strips 2 inches apart on baking sheets. (Alternatively, working in batches, dough may be transferred to a cookie press fitted with a ribbon disk and pressed out in long strips 2 inches apart on baking sheets.) Dough strips may break in places but repairs are not necessary, as strips will be cut later.
  • In a small bowl whisk together egg white and a pinch salt until just combined. Brush each strip of dough with some egg white and bake in batches in middle of oven until golden brown, about 10 to 15 minutes. While crackers are still hot, slice diagonally into 1 1/2-inch-long pieces and cool completely on racks. Crackers keep in airtight containers 5 days.

1 cup fresh breadcrumb
2 tablespoons margarine, melted
1 (2 7/8 ounce) can French-fried onions
