ZUCCHINI AND CHERRY TOMATOES WITH RED PEPPER DRESSING

Zucchini and Cherry Tomatoes With Red Pepper Dressing image

Zucchini's inherent versatility is well known. It shows up in pastas, vegetable stews and can even be pickled. In this salad, thinly sliced zucchini is very briefly blanched, then paired with other summery ingredients and served at room temperature. Roast the red pepper yourself or use a quality brand from a jar.

It's an excellent low-calorie food, with only 19 calories per cup of raw squash. This dish is great on its own as a side dish, but it can also be incorporated into many other recipes.

Tips:

  • Choose firm and fresh zucchini: Look for zucchini that is firm to the touch and has a deep green color. Avoid zucchini that is soft or has blemishes.
  • Slice the zucchini evenly: This will help them cook evenly. If you are using a mandoline, be sure to use the safety guard to protect your fingers.
  • Don't overcrowd the pan: When cooking the zucchini, be sure to give them enough space in the pan so that they can brown properly. If you overcrowd the pan, the zucchini will steam instead of brown.
  • Season the zucchini well: Before cooking, be sure to season the zucchini with salt, pepper, and any other desired spices. This will help to enhance the flavor of the zucchini.
  • Cook the zucchini until tender-crisp: Zucchini should be cooked until it is tender, but still slightly crisp. Overcooking will make the zucchini mushy.

Conclusion:

Peppers, onions, zucchini, and tomatoes are all healthy and delicious vegetables that can be used to create a variety of dishes. This recipe for peppers, onions, zucchini, and tomatoes is a great way to enjoy these vegetables. The dish is easy to make and can be served as a side dish or main course. The combination of flavors and textures in this dish is sure to please everyone at your table.
