PICKLED CIPOLLINI ONIONS IN SHERRY

I can find Cipollini onions at Trader Joes.Cooking Light, SEPTEMBER 2003 "Serve these traditional English-style sweet-sour-spicy pickled onions as a first course with cheese, sliced or chopped in a salad, or thinly sliced and heated with a ribeye steak. Boiling the onions in salted water keeps them crisp. Let them sit a month to absorb the subtleties of the pickling liquid. Keep the spices whole to prevent clouding and sediment."

Yield Makes about 5 cups

Number Of Ingredients 6

1/2 cup olive oil
8 medium-size red onions, cut into 1/3-inch-thick rounds
3/4 cup Sherry wine vinegar
1/2 cup sugar
3 cups cranberries
2 teaspoons chopped canned chipotle chiles*

Steps:

  • Heat 1/4 cup oil in large deep nonstick skillet over medium-high heat. Add half of onions to skillet and sauté until tender and golden brown, about 12 minutes. Transfer onions to large bowl. Repeat with remaining 1/4 cup oil and remaining onions. Return all onions to same skillet. Add vinegar and sugar, then cranberries, and simmer over medium heat until cranberries pop and juices thicken slightly, about 8 minutes. Stir in chipotle chiles. Season to taste with salt and pepper. Cool. (Can be prepared 5 days ahead. Cover and refrigerate. Bring to room temperature before serving.)
  • *Chipotle chiles canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores, and some supermarkets.

Tips:

  • Choose the right onions: Smaller cipollini onions, about 1 inch in diameter, are ideal for pickling, as they maintain their shape and texture well.
  • Use a quality sherry vinegar: Sherry vinegar adds a distinct flavor to the pickled onions, so choose a good quality one. Look for a vinegar that is aged for at least 6 months.
  • Add some aromatics: To enhance the flavor of the pickled onions, add some aromatic ingredients such as garlic, bay leaves, or peppercorns to the pickling liquid.
  • Let the onions pickle for at least 2 weeks: The longer the onions pickle, the more flavorful they will become. However, you can enjoy them after just a few days if you prefer.
  • Store the pickled onions properly: Once pickled, store the onions in a clean glass jar with a tight-fitting lid in the refrigerator. They will keep for several months.

Conclusion:

Pickled cipollini onions are a delicious and versatile condiment that can be used in various dishes, from salads and sandwiches to pizzas and tacos. They are also a great way to add a pop of color and flavor to your charcuterie board. With just a few simple ingredients and a little time, you can easily make your own pickled cipollini onions at home.
