I used to make this for the family to take to school in their sandwiches. Typical Aussie Kid's, they loved it with Tomato Sauce. This is also great for a picnic. I had forgotten about this recipe, mum used to dice, carrots, celery and also add peas and added them to this recipe. I think this was the economical way of making something different for school lunches.

500 g ground sausage
6 shallots, chopped
2 teaspoons Angostura bitters
1 teaspoon dried herbs
1/2 garlic clove, crushed
seasoning
1 egg, beaten
1 tomatoes, peeled & chopped

Steps:

  • Combine all ingredients together and form into a loaf shape.
  • Lightly grease a meatloaf pan or tin and spoon the mixture into the tin, making sure to press down well.
  • Cover and bake at 180°C for 1 to 1 1/2 hours.
  • Drain off any excess fat from loaf.
  • Let loaf sit and cool and refrigerate.
  • Serve cold and slice thinly to serve.

2 loaves (1 pound each) frozen white bread dough, thawed
1/2 pound mild pork sausage
1/2 pound bulk spicy pork sausage
1-1/2 cups diced fresh mushrooms
1/2 cup chopped onion
3 large eggs, divided use
2-1/2 cups shredded mozzarella cheese
1 teaspoon dried basil
1 teaspoon dried parsley flakes
1 teaspoon dried rosemary, crushed
1 teaspoon garlic powder

Steps:

  • Cover dough and let rise in a warm place until doubled. Preheat oven to 350°. In a large skillet, cook sausage, mushrooms and onion over medium-high heat until sausage is no longer pink, breaking up sausage into crumbles, 6-8 minutes. Drain. Transfer to a bowl; cool., Stir in two eggs, cheese and seasonings. Roll each loaf of dough into a 16x12-in. rectangle. Spread half of the sausage mixture over each rectangle to within 1 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seams to seal. Place on a greased baking sheet., In a small bowl, whisk remaining egg. Brush over tops. Bake until golden brown, 25-30 minutes. Serve warm. Freeze option: Securely wrap and freeze cooled loaves in foil and place in resealable plastic freezer bags. To use, place foil-wrapped loaf on a baking sheet and reheat in a 450° oven until heated through, 10-15 minutes. Carefully remove foil; return to oven a few minutes longer until crust is crisp.

plain flour , for dusting
200g mozzarella , grated
10 thin slices ham
1 small red onion , finely chopped
oil , for greasing
8 tbsp ready-made tomato pasta or pizza sauce, to serve

  • Make up the bread dough following pack instructions. Roll out on a lightly floured surface to a rectangle approximately 20 x 45cm.
  • Scatter the cheese, ham and onion over, then fold up the edges so the filling is enclosed. Roll into a long sausage so it looks like a baguette. Transfer to a lightly oiled tray and leave in a warm place, loosely covered with oiled cling film to puff up a little. It will take about 30 mins.
