DETHBERT'S PEAR PIE

Dethbert's Pear Pie image

I've made these pies 4 or 5 times at this point, and I still can't decide if they are merely interesting or the greatest thing ever. I will update this after the 10th making. If you are unfamiliar with pears, read up on them. Usually they need to ripen for several days once they've been purchased from the store.

Time 55m

Yield 16

Number Of Ingredients 10

1 cup all-purpose flour
½ cup white sugar
½ teaspoon salt
2 cups finely shredded mild Cheddar cheese
1 cup butter, softened
⅔ cup white sugar
2 tablespoons cornstarch
¼ teaspoon salt
10 large pears, peeled and thinly sliced
2 unbaked 9-inch pie crusts

Steps:

  • Sift flour, sugar, and salt into a mixing bowl. Stir grated Cheddar cheese into the flour mixture using a fork. Stir in butter using a wide spoon until mixture becomes crumbly. Set topping mixture aside at room temperature.
  • Preheat the oven to 400 degrees F (200 degrees C). Place pie crusts in their tins onto a baking sheet to catch drips; place crusts 1 inch apart.
  • Sift sugar, cornstarch, and salt into a small bowl. Place pears in a large mixing bowl. When oven is hot, sprinkle sugar mixture over pears and stir to combine. Pour filling evenly into the 2 pie crusts. Divide topping mixture in half and add to the top of each pie in 4 to 6 dollops; use a wide knife to spread evenly.
  • Bake on the middle rack of the preheated oven for about 18 minutes; the pears will produce a lot of liquid and will bubble over. Check pies and cover with aluminum foil if crust or topping is getting dark. Bake about 7 minutes more.

Time 1h30m

Yield 16 serving(s)

Number Of Ingredients 12

3 cups dried pears (1 1/2 pounds)
4 1/2 cups water
1/2 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup butter, softened to room temperature
2 egg yolks
5 -8 tablespoons ice water
1 egg yolk, beaten with
2 tablespoons water

Steps:

  • Simmer pears in the water for 30-40 minutes until soft; drain, reserving liquid; once pears are cool, purée them in a food processor or blender, stopping food processor occasionally and scraping down its sides and adding enough reserved pear liquid to make a thick purée about the consistency of mashed potatoes.
  • Heat 1/2 cup of reserved pear liquid in saucepan; stir in sugar and cook for about 5 minutes until the sugar begins to caramelize; add pear purée, cinnamon, and cloves; stir well; remove from heat and allow to cool.
  • Meanwhile, whisk together flour and salt in a large bowl; cut in butter (using pastry cutter, two knives, or your fingers) until mixture resembles coarse crumbs; beat egg yolks with 3 tablespoons ice water then add to flour mixture; stir, adding more ice water a tablespoon at a time, until dough comes together and forms a ball; chill dough for 10 minutes.
  • Divide dough into 16 equal-sized balls; on a floured surface, roll each ball into a 3-4" circle; brush edge of each circle with the beaten egg yolk mixture and place 2-3 tablespoons of the filling in the center; fold dough over the filling to form a semi-circle; crimp edges with a fork to seal the empanada; pierce top of each empanada a couple times with fork and brush it with egg yolk mixture; carefully lift empanadas with a spatula and place onto a baking sheet that has been sprayed with no-stick cooking spray; bake at 350° for 30-40 minutes until empanadas are puffy and golden.
  • NOTE: For a simple and quick treat, make these empanadas using your favorite flavor of canned pie filling.

BASIC PECAN PIE RECIPE BY TASTY

Basic Pecan Pie Recipe by Tasty image

It wouldn't be Thanksgiving without classic pecan pie on the dessert table! Our recipe uses the classic (and foolproof) Tasty pie crust to envelop the sweet and nutty filling.

Provided by Chris Salicrup

Categories     Desserts

Time 2h10m

Yield 8 servings

Number Of Ingredients 13

2 cups all purpose flour, plus more for dusting
1 kosher salt
1 ¼ sticks unsalted butter, cubed and chilled
2 large egg yolks
4 tablespoons ice water
2 cups pecan, halves, divided
¾ cup light corn syrup
3 large eggs
1 cup granulated sugar
1 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
½ teaspoon kosher salt
dried bean

Steps:

  • Make the crust: Sift the flour and salt together into a large bowl.
  • Using only your fingertips, pinch the cubes of butter into the flour, breaking up the butter as you go, until no large lumps remain. Shake the bowl to coax the large chunks of butter to the surface.
  • Mix the egg yolks and ice water together in a small bowl with a fork until evenly combined.
  • Add the liquid to the flour mixture, reserving ¼ or so in case you don't need all of it--you don't want the pastry to be too wet. Quickly mix everything together with a fork until the dough just starts to come together. Add more liquid to the driest parts of the dough if needed. The dough is ready when it holds together in a ball when squeezed in your palm.
  • Transfer the dough to a clean surface and bring together in a disc. Wrap the dough disc in plastic wrap and chill in the refrigerator for at least 30 minutes, or up to 4 days.
  • Preheat the oven to 350°F (180°C).
  • Lightly flour a clean surface and unwrap the disc of chilled dough. Flour the top of the dough. Start to roll out the dough, turning every few rolls.. If any cracks form, smush them back together. Roll out the dough to a circle about ⅛-inch (3 mm) thick and place into a 9-inch (22 cm) pie dish. Trim any excess dough around the sides, then crimp the edges in a decorative pattern.
  • Place a piece of parchment in the center of the pie crust and add the pie weights or dried beans. 9. Bake for 15 minutes, until lightly golden brown.
  • Make the filling: In a large bowl, whisk together 1½ cups (185 G) pecans, corn syrup, eggs, sugar, vanilla, melted butter, and salt.
  • Carefully lift the parchment with the pie weights from the par-baked pie crust, then pour in the filling. Arrange the remaining ½ cup (62 G) pecans in concentric circles on top.
  • Return the pie to the oven for 20 minutes, then cover with a piece of foil and continue baking for 40 minutes, until the filling is completely set. Let the pie cool completely.
  • Slice and serve the pie chilled or at room temperature.
  • Enjoy!

Tips:

  • Choose ripe and firm pears: To ensure your pear pie is bursting with flavor, select pears that are ripe but still firm. This will give you the perfect balance of sweetness and texture.
  • Peel and core the pears: Before cooking the pears, you need to peel and core them. To make this process easier, you can use a vegetable peeler and a melon baller. You can also use this method to remove the core.
  • Cook the pears: There are two main ways to cook the pears for your pie: poaching and sautéing. Poaching is a gentle method that involves simmering the pears in a sugar syrup. Sautéing is a faster method that involves cooking the pears in butter until they are softened and caramelized.
  • Make the pie crust: While the pears are cooking, you can make the pie crust. There are many different recipes for pie crust, but a simple all-butter crust is a good option for beginners.
  • Assemble the pie: Once the pears and pie crust are ready, you can assemble the pie. Start by lining a pie plate with the bottom crust. Then, add the filling and top with the remaining crust. Crimp the edges of the crust together and bake the pie until the crust is golden brown and the filling is bubbling.

Conclusion:

Making a pear pie is a fun and rewarding experience. By following these tips, you can create a delicious and beautiful pie. Pear pie is a classic dessert that can be enjoyed all year round. It is perfect for potlucks, picnics, and holiday gatherings. So, next time you are looking for a special treat, try making a pear pie. You won't be disappointed.
