1 cup butter, softened
2 cups packed brown sugar
2 eggs
4 cups unbleached all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 (8 ounce) cans crushed pineapple, drained
1 cup butterscotch chips

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets or line with parchment paper.
  • In a large bowl, cream together the butter and brown sugar until smooth. Beat in the eggs one at a time, mixing well after each. Combine the flour, baking powder and salt; stir into the sugar mixture. Mix in pineapple and butterscotch chips. Drop cookies by rounded teaspoonfuls 2 inches apart onto the prepared cookie sheets.

1 cup brown sugar
3/4 cup butter or 3/4 cup margarine
1/2 teaspoon baking soda
1 (16 ounce) can crushed pineapple, drained
1/4 cup sugar
3 tablespoons apricot jam (or apricot and pineapple jam or preserves)

Steps:

  • Preheat oven to 375 degrees F.
  • Grease a 9-inch square baking pan.
  • In a medium saucepan combine pineapple, sugar and jam and bring to a boil over medium heat, stirring occasionally. Let cool.
