HAWAIIAN PINEAPPLE STUFFING

This is my take on pineapple stuffing (or pineapple filling). I had another recipe and I've tweaked it to my liking so it's not as sweet but still just as delicious! I started making this just for Easter but now it is requested ths I bring it to all holiday meals because it's like getting to eat a dessert with dinner! It's a very dense dish and definitely not for the faint of heart. It's also good served with a scoop of vanilla ice cream on top.

Yield 6-8 people

Number Of Ingredients 5

1/2 cup butter
3/4 cup sugar
4 eggs
5 slices white bread, cut into crumbs
1 large can crushed pineapple, drained a little

Steps:

  • Preheat oven to 350 degrees. Mix sugar and butter together. Beat in eggs one at a time. Add pineapple and fold in cubed bread. Bake for 1 hour in 1-1/2 qt dish.

Tips:

  • Use fresh pineapple. Fresh pineapple has a brighter flavor than canned pineapple. If you're using canned pineapple, be sure to drain it well.
  • Brown the sausage before adding it to the stuffing. This will help to give the stuffing more flavor.
  • Use a variety of nuts. This will add texture and flavor to the stuffing. Some good options include pecans, walnuts, and almonds.
